Los vinos de la eterna flor

Los finos y amontillados de Lagar de los Frailes, en Montilla-Moriles desafían los límites de la crianza biológica bajo velo de flor, tras permanecer años en crianza estática

ay una bodega semienterrada en tierras de albariza en Moriles alto que guarda joyas en sus barricas. La albariza es una marga blanca rica en carbonato cálcico y con gran capacidad para retener la humedad. En Moriles la llaman con el poético nombre de tosca hojaldrada. En la zona de Montilla se conoce como tosca cerrada o antehojuelas. Casi dan ganas de comérsela. Aunque, en realidad, es una tierra paradójica: blanca, calcárea y aparentemente muy pobre. Pero, en cambio, ofrece unas posibilidades extraordinarias para hacer vinos de calidad. En la bodega, a 370 metros sobre el nivel del mar, hace frío en invierno y durante el tórrido verano cordobés aguanta bastante una temperatura razonable. Lagar de los frailes es una bodega situada en Aguilar, en la zona de Moriles alto, que podría considerarse el gran crú de la D.O. Tanto, que hay expertos que creen que debería distinguirse hablando de vinos de Moriles, dada su acusada personalidad y las características especiales de estos generosos. El vino de Moriles nace vinculado a trece lagares históricos. De hecho, este lagar figura ya en los registros catastrales de 1749, cuando pudo verse afectado por la desamortización de Mendizábal. Aquellos trece lagares integraban la antigua aldea de Zapateros, que dio origen a Moriles. Aunque forman parte de la misma Denominación de Origen, el desarrollo empresarial está mucho más avanzado en la parte de Montilla, posiblemente porque Moriles, que se dedicó a la venta a granel, fue históricamente zona de lagares, pero las bodegas estaban en Lucena.

El Lagar de los Frailes es uno de esos lagares históricos, con once hectáreas de Pedro Ximénez, la única uva que entra en el lagar. Lo de los frailes le viene por su vinculación a los carmelitas de Moriles. Los monjes, no en vano, siempre han estado ligados a felices noticias vinícolas: especialmente los benedictinos y los cistercienses. De hecho, Pierre Perignon, el fraile bodeguero de la abadía de Saint-Pierre de Hautvillers de Reims, merece algo más que la etiqueta de un champaña mítico.

Los hermanos Pérez Morales -Cristóbal, María Dolores, Charo y Ana- gestionan hoy una bodega con la que se hizo su padre en 1982. Hasta hace solo un par de años, la bodega se limitaba a la venta a granel. Cristóbal, el hijo mayor y, como su padre, Jesús Pérez Cisneros, farmacéutico, decidió a la muerte del mismo que lo primero que tocaba era saber qué tenían en las barricas que conservan en aquel paraje, donde ya hacían vino los romanos e incluso los musulmanes, que los utilizaron para fines medicinales. La crisis del jerez en la década de los ochenta también afectó a Montilla-Moriles. La canilla de las botas se abría poco. Así, los vinos fueron criándose en estática, con el refresco justo de vinos de otras bodegas de la zona. 326 barricas de roble americano y 24 bocoyes de castaño de 700 litros que se disponen para crianza por el sistema de criaderas y soleras. El velo de flor, que es la capa de levaduras que crece en las barricas y permite criar los vinos protegiéndolos de la oxidación, es la clave de unos vinos muy especiales.
“Cuando llegué estaba convencida de que solo encontraría vinos para hacer vinagre”. Explica Cristina Osuna, la enóloga de la bodega. Pero la sorpresa fue mayúscula: “Salvo tres Barricas, el resto estaba en plenitud y había vinos importantes y maravillosos”. La crianza estática había obrado el prodigio. Vinos finos hasta con 15 años, al límite de la biología. Y amontillados que, desde la nariz, anuncian calidad, persistencia y personalidad. La enóloga reclasificó los vinos en función de su vejez y su tipología. Ahí comenzó el camino de la calidad de los vinos de Lagar de los Frailes.

En Moriles la biología es eterna: la uva es potente, aguanta crianzas muy largas, el vino es dorado y con un carácter tranquilo, “como su gente”, dice Cristobal Pérez. En esta bodega no se añade alcohol al vino. Solo tienen la graduación natural. Son vinos sin fortificar, a diferencia de los vinos generosos de Jerez, los marsalas o los madeiras. Tienen mucho carácter y, sobre todo, una acidez muy oportuna. Tienen acidez y unos toques cítricos sorprendentes. La enóloga, que cree que el origen está en la levadura, está trabajando con la Universidad de Córdoba en establecer el origen de esos cítricos que le dan unas características acusadas a esos vinos. “Además, de la tierra, la uva y las barricas, hay algo más que le confieren ese cítrico especial”, dice Cristina Osuna, “tengo detectado que hay tres bodegas de Moriles alto, un triángulo, donde se dan unos cítricos muy acusados, que estoy convencida que vienen de las levaduras: al haber estado tantos años en estática, la flor está presente todo el año, más o menos gruesa, pero no desaparece, se ha aclimatado perfectamente a esta bodega”.

La bodega maneja seis vinos, incluyendo los tres de la línea Terrevuelos que definen la gama alta de la bodega. Todos los vinos son en rama, sin filtrar ni tratamientos adicionales. Dos son finos; el tercero es una rareza extraordinaria entre fino y amontillado; otros dos son amontillados y el último, un palo cortado. Los finos tienen mucho volumen, poso, cuerpo, invitan a seguir bebiendo y siempre conservan una punta de acidez prodigiosa. Los amontillados son, como dicen en la zona, vinos acamuesados, o sea, oxidados, viejos, generalmente con mucha madera. Todos están entre los 25 y los 90 euros, jugando en el sector de vinos premium. “La comercialización es compleja, pero tenemos vinos de calidad, especiales y hay un público para nuestro producto”, explica Alfonso Fernandez, director comercial de la bodega, además de miembro del panel de catas de Montilla-Moriles y experto catador de aceites, quien andaba muy ilusionado con la partcipación de su casa en Vinoble, que se fue el traste por la crisis del coronavirus.

El vino de Montilla-Moriles tiene grandes defensores. Entre ellos, Josep Roca, el señor de los vinos del Celler familiar, un enamorado y defensor de los vinos generosos andaluces, quien revindica que Montilla es “una tierra que exhala mitología por todos los poros” y, sostiene, en una entrevista con el experto Juancho Asenjo, que “es un vino que se parece a la gente que lo hace” y lo define como “austero, robusto, vigoroso, con más musculatura, más empaque, un vino de esconder el nervio y mostrar las formas blandas, un vino más introvertido, más parco en palabras y con más capacidad de ganarte si le dedicas tiempo. Cuesta entrar pero cuando entras ya no sales”.

CATA

El más joven de la familia, con siete años de crianza bajo velo de flor. Amarillo pajizo con ribetes verdosos. Salino, con toques herbáceos, un sutil almendrado y unos cítricos muy especiales. Es untuoso en el paladar como todos los vinos de la casa. En nariz desarrolla ahumados muy agradables. Invita a seguir bebiéndolo.

Fino de gama alta, con 15 años de crianza bajo velo de flor, muy al límite de la biología. Mayor sapidez que su hermano menor y más estabilizado. Em boca deja aunque sutilmente almendra y avellana. Igualmente se presenta sin filtrar. Es un vino complejo, con larga persistencia en boca. Los 15 años se desarrollan en la nariz, con mucho recorrido. Rotundo.

Este vino , con 23 años de edad media, es una exquisita rareza. Envejece en bocoyes de castaño. El único vino de añada de la bodega. Ha permanecido en estática y sólo ha tenido pequeños rocíos de bodegas de la zona para compensar las mermas. La flor de su barrica nace y decae. Y vuelva a nacer y vuelve a morir. Así, se cría alternando la crianza biológica con la oxidativa. Almendras y tostados en boca. Lo presentan en la categoría de finos, pero también tiene características de amontillado, sobre todo en nariz. La enóloga le llama Peter Pan, «porque no quiere dejar de ser fino».

Este vino se embotella con 12 años de crianza biológica y 13 de oxidativa. 25 años contemplan por lo tanto este amontillado recio con una nariz que enamora. El tiempo le ha conferido profundidad y complejidad. Muestra un acidez brutal. Avellana, tofee.

Este es otro mundo. Ambarino , limpio y luminoso. Un vino complejísimo, con 40 años y 18 grados. Sapidez y acidez. Tiene un final eterno en boca, con presencia de frutos secos. Es potente pero fresco a la vez, un equilibrio mágico. Caramelo, tofee, cáscara de naranja. Algunos expertos relacionan su cítrico con la bergamota. La nariz evoluciona del yodo y la sapidez inicial hasta alcanzar la vainilla y el tabaco que le da el roble americano. En una tercera fase desarrolla ahumados y café . Posiblemente el vino más especial de la casa.

El palo cortado de la bodega sale con 40 años de edad media . Solo 300 botellas. Una reliquia que alcanza 18,5 grados. «Un palo cortado de los que nacen, no de los que se hacen», sostienen en la bodega. Es un vino seco, directo, con salinidad, acidez y persistencia. Muy especial. En boca -donde por momentos parece más un oloroso- no pierde frescura. Avellana, nuez, nuez moscada, cacao, caramelo. Delicioso.
