El capitán de Aponiente, con cuatro estrellas Michelin, se sincera: «primero el mar, después la cocina»
ngel León es anfibio. Es vertebrado y con respiración pulmonar, sin descartar alguna metaformosis en la que atravesara fases branquiales. Anfibio de pensamiento, palabra, obra y omisión. Ocurre que no estamos acostumbrados a estos prodigios y tendemos, lanares como somos, a creer que todos somos iguales. Pero no. Apostaría a que si pudiera elegir, al menos media vida la pasaría debajo del mar, persiguiendo nuevos fitoplánctones y especies abisales, hablándoles a los bichos marinos de tú a tú, e incluso convenciéndoles para que se dejen convertir en un delicioso embutido marino o en pareja de hecho de una caballa asada sobre huesos de aceitunas. Todo por el bien del planeta. ¡Un pactista¡, tronaría media humanidad, convencida de que lo mejor que se puede hacer es pescar y esquilmar mientras el invento aguante !Qué es eso de dialogar con los peces¡, bramarían. Un visionario, dirían sus valedores: un tipo que mira más allá porque ve más allá y que tras descubrir la inagotable y sostenible despensa del mar, ha decidido ser su apóstol en la tierra, su exégeta, el primer militante, su cocinero y su líder in pectore.
Podría ser el cocinero del capitán Nemo en su Nautilus, empeñado en aliviar los días difíciles de aquel personaje taciturno y misterioso que alumbró Verne, pero, por su exposición a la luz, más bien parece haberse criado en aquella pequeña isla japonesa en la Bahía de Ise, junto a aquellos pescadores -pieles tostadas, ojos azules- aislados de la civilización a la que nos transporta Yukio Mishima en El rumor del oleaje. La apabullante naturaleza, el oleaje azul del Pacífico, el viento, las cuerdas de cáñamo y un faro. «En los lenguados negros y mojados, con sus ojillos hundidos en los pliegues de la piel, se reflejaba el azul del cielo». Sin duda, había sido feliz en virginal comunión con aquella naturaleza oceánica.
Aunque su realidad tampoco fue tan distinta: echó los dientes con su padre en el Escorpio, la lancha familiar. Hoy se pelea con corvinatas, caballas, brecas y jureles desde su Yodo. Ferrán Adriá decía: «Innovar es no copiar». Pues eso.
Qué difícil resulta hablar de un cocinero y de su cocina cuando su actividad innovadora, por más que esté fielmente vinculada a su cocina y sirva a ella, cobra una personalidad tan relevante y adquiere vida propia. Detesta el uso de la palabra sostenibilidad porque su reiteración la desprovee de su sentido último. Pero su teoría y praxis sobre uso de pescados de descarte y el aprovechamiento de todas las potencialidades marinas es tan brutal que corre el riesgo de colocar en un segundo plano lo bien que se come en Aponiente, donde se cocina el mar del litoral, los esteros y las marismas gaditanas. Tierra, agua y cieno. Ese es el blasón de la casa.
Este agosto, en carta: molusco( jalapeño), camarón (tortillita), sarda (cortadillo), huevas de lisa (canelé), boquerón (verduras), ¿producto? (mahonesa), plancton (mantequilla), lisa (fiambres), corvina (bacon marino); calamar (salpicón), langostino (esencia), ostión (marinera), pescadilla (caldillo), halófilas (a la crema), acedía (tuétano marino), puntillón (morcilla), coco y miel de mar. «El mar/ la mar/el mar/ solo la mar». Todo muy albertiano de marinero en tierra, puro El Puerto de Santa María.
Porque León no es un inventor, aunque también. Y no es un visionario, aunque también. Es un cocinero de su tiempo, comprometido con un discurso que lleva al plato y absolutamente sensible con las oportunidades que nos brinda el planeta agua para su autoprotección. Así que, en todo caso, sería un inventor que baja a la tierra sus inventos y un visionario que aterriza el futuro en su carta del molino de mareas de El Puerto de Santa María (Cádiz), coronado por tres estrellas Michelin (suma su cuarta estrella en Alevante, Chiclana), una especie de fortín de piedra ostionera en pleno parque natural, un prodigio del pasado donde se molía la harina con las bajamares y pleamares que se colaban por las compuertas. El pan de las mareas. Una preciosidad de un ayer más práctico, sostenible y desaparecido. Pero cuando el chef del mar se hizo cargo de la instalación, el molino estaba abandonado, como lo siguen estando otros restos de molinos que quedan desperdigados por la bahía de Cádiz.
Tiene 43 años, está casado con Marta Girón de Sola -al frente de La taberna del chef del mar– y es padre de un hijo de cinco años. Un tipo que conjuga la primera persona del plural: un nosotros que no es falsa modestia sino confianza en la tripulación con la que navega. sabiendo que ningún viento es favorable a quien no sabe a dónde va.
Hace quince años tenía usted una pequeña taberna en El Puerto de Santa María, El tambuche. Hoy tiene cuatro estrellas Michelin, está implicado hasta en cuatro restaurantes y entre una cosa y otra paga 120 nóminas. ¿Se toma tiempo para mirar atrás?
Pues sí, a veces miro para atrás y no sé qué pensar. Hay gente que siempre ha querido ser algo, que ha tenido las ideas muy claras. Yo miro a esa gente y flipo porque aún me veo entrando en el molino de mareas y veo todo lo que nos ha pasado y es que sigo flipando. Yo no tenía un plan preconcebido. La vida me he ido llevando
Habla de las cosas que le han pasado, como si fuera un suceso, o una arbitrariedad del destino. Una lotería. ¿Las cosas le pasan, no hace usted que le pasen?
Bueno sí, obviamente detrás de todo esto hay mucho trabajo detrás, de un equipo enorme de gente con mucho talento. Y también es la historia de mis convicciones, de la elección de un camino y de haberlo llevado a sus últimas consecuencias. Aunque mantengo la sensación de que queda mucho por recorrer
Entonces ¿el tambuche era su sueño?
Sí, mi sueño era tener un bar en el Puerto de Santa María y no moverme de mi tierra, de mi casa, de mi gente. Sencillo.
¿Siempre ha buscado el mar y su despensa con tanto afán, o el mar le ha salido al camino?
Pues en buena parte del mar me ha ido saliendo al camino. Pero eso sí, siempre he soñado con poder contar todos los registros que tiene el mar. Cosas nuevas de ese universo, no lo habitual. A veces cuando doy una conferencia llevo unas cuartillas y le pregunto a la gente que me dibuje qué es para ellos el mar y si vieras los dibujos… siempre pintan el mar muy plano, con chiringuitos y cosas así. Hay una visión muy limitada del mar, de los océanos. Cada paso que he dado me ha enganchado más, e insisto en que hay todavía más y más por descubrir. Yo lo quiero todo. Quiero todo el mar .
¿Hoy que va primero, el mar o los fogones?
Me he dado cuenta de que he engañado a mucha gente durante mucho tiempo. Pues ha llegado un momento de mi vida en el que ya no quiero engañar a nadie: primero el mar, después la cocina. Todo mi relato, mi vida está basada en el mar, esa es mi narrativa. Lo que me estimula y me hace crecer. Es un mundo inmenso, inacabable.
¿ Y qué sabe del mar a estas alturas?
Pues realmente lo que sé es que es un mundo en el que aún queda mucho por descubrir. Estoy seguro también de que me moriré sin tener ni puta idea. El ser humano necesita estar con los pies en la tierra, no quiere nada desconocido, nada que desafíe sus certezas. Somos muy primitivos en eso. Pero realmente tenemos muy poca información del mar. Yo para hacer lo que hice me tuve que basar en la tierra, en la cultura común de todos. A partir de ahí pude darle a la gente de comer las cosas que se parecían a las que conocían, aunque las proteínas eran de origen marino. Es un tema cultural. Un salchichón de sapo, por ejemplo, dicho así, no se lo toma nadie. Pero si el salchichón de sapo lleva unos aliños, unos condimentos, un aspecto fórmal y una forma de cocinarlo que lo eleva a otra cosa, el cuento cambia.
¿El innovador se ha comido al cocinero?
No exactamente. Sería malo, porque al final a lo que me dedico es a dar de comer a la gente. Ese es el fin de lo que hacemos. El innovador y el cocinero de alguna forma se comen mutuamente y se complementan. Hay un equilibrio. Hace tres años que me di cuenta que la gente venía a mi restaurante a comer. Así que el valor añadido había que hacerlo con discreción, sin hacer ruido, sin marear a los clientes. Algo suculento, goloso, que ayudara a reducir la distancia entre la gente y el mar.
De alguna forma ha ido usted educando a sus clientes
Parecerá paradójico, pero siendo un restaurante de pescado, siempre he huido de poner un trozo de pescado en el plato. Un día solo serviré cosas que formalmente no sean obvias, ninguna proteína será lo que parezca ser. Toca pasar de fase. Hay gente que viene Aponiente y no le gusta el pescado, pero yo voy a ponerlo de omega3 hasta arriba.
¿Este nuevo tiempo de sensibilidad y conciencia sostenible que vivimos ha ayudado a su proyecto, a su forma de entender la cocina en su relación con el mar, no?
La verdad es que ocurren muchas cosas. Hemos creado una marca y ahora que hay esa sensibilidad respecto a la naturaleza, el tiempo está ayudando a nuestro discurso. Cuando hace 15 años empezamos cocinando pescado de descarte casi me tenía que pelear con algunos clientes que esperaban que le sirviera gamba roja y bogavante por venir a un restaurante de pescados y mariscos. El tiempo ha cambiado. Pero nosotros ya lo habíamos hecho antes.
Al principio fue el clarimax. Ahora palomitas marinas con semillas de juncos de marisma. El plancton. Y así hasta el infinito. Todo con una coherencia y un sentido, hilado con su apuesta. ¿qué le queda por descubir?
Hay nuevos descubrimientos que espero poder comunicar pronto. Y el mar hay que entenderlo como una fuente de alimentación brutal. Quiero creer que en el mar hay fruta, tubérculos, cereales. Todo está ahí
¿cómo consigue el equilibrio entre la innovación, la profundidad de la cocina y una apuesta por la sensibilidad marina?
Nosotros trabajamos con un departamento de siete personas dedicadas al I+D: un biólogo, un jefe de investigación + desarrollo y cinco cocineros que están en distintos proyectos a la búsqueda de nuevos alimentos en varias empresas, en contacto con universidades, con el sector de la acuicultura etc. Pero ahora voy a montar un departamento de creatividad. Con el tiempo terminas cayendo en que al final no cocinamos platos. Mi departamento de I+D no está pensando para pensar en platos. Esa pata le falta a mi negocio. Así que estamos montando ese nuevo departamento de creatividad.
Varios meses cerrado por la pandemia, ha perdido toda la campaña de primavera y después, parte del verano debido a que un trabajador suyo dio positivo en covid. Tiempos duros y extraños.
Es rarísimo este tiempo. Todos estamos inquietos. Hemos pasado por un tobogán emocional, de estar arriba y abajo. Trato en este tiempo de intentar ser más frío para que no todo te afecte . Cuando hemos abierto el 2 de septiembre lo hacemos con tres PCR semanales a cada uno de los trabajadores. Pero si volvemos a tener otro problema seguramente daremos por liquidada la temporada. No se puede estar abriendo y cerrando permanentemente.
¿Qué piensa cuando se entera que el Noma , que ha llegado a ser considerado el mejor restaurante del mundo y su chef, René Redzepi, el inspirador de la nueva cocina nórdica, reabre tras el cierre por la pandemia reconvertido en un bar de hamburguesas?
Pues fíjate, desde hace tiempo nos han puesto siempre a René de ejemplo de muchas cosas que se pueden hacer. Pero si esto lo hace alguno de los colegas españoles igual se lía gorda. Considero que René es un transgresor, un grandísimo cocinero, pero igual tiene que seguir haciendo lo que sabe hacer. Ahora se dice mucho que nos tenem,os que reinventar, en empezar a cuestionar todo, que pensemos si hay que servir los mismos menús, los mismos precios…. pues yo siempre me he reinventado, siempre me lo he cuestionado todo, pero por convicción. Llevo reinventándome toda mi vida.
¿Le gustaría vivir debajo del mar?
Hubo un tiempo en el que hacía submarinismo. Un día me colé más profundo de lo que debía persiguiendo un mero.Tuve un susto porque descomprimí mal y comprobé que era un ser terrestre. Aunque, eso sí, me gustaría estar toda la vida mirando al mar, porque ahí está todo.
