Cócteles japo-asiáticos: ¡asúuuucar y sake¡
El experto Sergio Rubén García propone para el verano siete cócteles alejados de los sabores tradicionales. La cocina y la mitología japonesa crean un universo propio que complementa la coctelería tradicional
creditar el origen de los cócteles es tan complicado como el funcionamiento del sistema abrefácil: quien lo inventó se forró tangando a media humanidad. ¡ Abrefácil ¡ Nadie conoce un solo ejemplo de ese sistema que funcione razonable y fácilmente. Pero volvamos a los cócteles. Hay quien sostiene que la palabra procede de las mezclas de aguardientes y jugos de frutas de un bar del puerto de San Francisco de Campeche, en México. El colorido de la mezcla recodaba a las colas de gallos (cock ´s tail). Otros estudiosos de la materia aseguran que el origen está en la jerga de los criadores de caballos de carreras norteamericanos que en el siglo XIX llamaban cola de gallo a los caballos de media sangre. Y una más: que fue un farmacéutico de Nueva Orleans, Antonio Peychaud, quien preparaba unos brebajes en una huevera (coquetier) con coñac, azúcar y especias. Una especie de Candié jerezano (huevo, caramelo y brandy) o de ponche de los que se hacen por medio mundo para combatir los enfriamientos y que, con singular alegría y desparpajo, en España también se le daba a los niños como remedio médico casero contra resfriados y enfriamientos.
A mí me gusta la historia del farmaceútico. De las boticas salieron los aguardientes y otros remedios estomacales que hoy tomamos destilados y con gran placer. Igual da, pero señalemos que la evolución nos lleva, al menos, a dos templos del cóctel: el bar Americano del Hotel Savoy de Londres o el Harry´s Bar de Nueva York. Y podríamos pactar que el old fashioned (whisky, azúcar, bíter y un twist cítrico) es el más antiguo que se conoce.
La coctelería clásica ha sufrido con los tiempos un autentico revolcón de formas, mixturas, sabores y estéticas. Para lidiar lo que va quedando de verano proponemos algo especial de la mano de Sergio Rubén García, valenciano de 35 años y sumiller de sakes, quien nos trae siete propuestas de cócteles de inspiración japo-asiática, alejados de la coctelería clásica.
Sergio Rubén sostiene que la coctelería es muy versátil: “Todos los cocteles tienen su historia detrás. Intento transmitir ingredientes que se utilizan más en la cocina que en un cóctel y darle presencia japonesa o asiática. La gastronomía japonesa está muy asociada a su cultura. Muchos ingredientes tienen pequeñas historias que forman parte del propio Japón”. Uno de sus ingredientes fetiche es el sake. “El sake es un gran desconocido. Tenemos la inercia de definirlo como si fuera un licor o un orujo o como un chupito al final de la comida pero es un error. Y tampoco es un vino de arroz. Tiene su propia categoría. Ni es una cerveza ni una elaboración parecida al whisky. Sake es sake. La base es el arroz, agua, levadura y el hongo koji que hace que fermente”. Un ingrediente habitual de la coctelería japo-asiática es el azuki, que es una alubia japonesa. Con ella preparan el anko, que es una que es un pasta de alubia dulce para repostería. En la coctelería termina siendo un sirope. O el espárrago blanco con pepino para crear un combinado inspirado en un ser mitológico japonés, el kappa, un cruce de ser humano, tortuga y sapo y que vive en los ríos de agua dulce de Japón. O la zanahoria para hacer un Ninjin Kintaro, que recibe el nombre de otro ser mitológico del bando de los buenos, un niño pelirrojo defensor de la naturaleza. Sergio Rubén llegado a hacer un hielo con alga nori para conseguir un mix de agua mediterránea y japonesa y emplea decoraciones con cristales de azúcar con kimchi, que es un adobo coreano ácido y picante, con cereza.
Un mundo diferente. Ahí van las propuestas de Sergio Rubén García, sin que nadie olvide las enseñanzas de la mítica -y perita en cócteles- Dorothy Parker: “Me gusta tomarme un dry Martini antes de las cenas; dos, como mucho. Si me tomo el tercero, acabo debajo de la mesa. Si me tomo el cuarto, debajo de mi anfitrión”.
1º MIZU SEICHI.
Los japoneses sienten una especial admiración por la naturaleza, ellos creen que muchos espíritus residen dentro de cada gota de agua y de cada semilla o árbol del bosque. En el monte Kaikomagatake, de los Alpes japoneses, situados al centro sur del país, a estos espíritus sin nombre se les conoce como los ocho millones de dioses. La naturaleza de estos bosques ha sido bendecida con vegetación exuberante, montañas escarpadas y las aguas más puras, esencial para el whisky. Este es otro de los secretos para conseguir sabores únicos. Lo llaman Mizu Seichi.
Ingredientes.
- Whisky. Hakushu 12 años.
- Agua de piña.
- Shiso. menta japonesa.
Decoración: cristal de piña.
2º SHIKI. LAS CUATRO ESTACIONES.
La temperatura y la humedad varía notablemente en Japón en cada estación, con diferentes intensidades dependiendo de la zona. Hay zonas donde las variaciones de temperatura son perfectas para la respiración del barril, que es cuando la madera se expande y se contrae, dándole vida al whisky hasta su maduración. Este es uno de los secretos, para conseguir un sabor único. A este fenómeno le llaman Shiki.
Ingredientes.
- Whisky. Hibiki 17 años.
- Agua con gas / Soda.
- Sirope de Higo.
Decoración: cristal de cereza.
3º AZUKI.
El anko es una pasta de judías rojas llamadas azuki, que se utiliza mucho en Japón para confitería, esta pasta está hecha a base de judía azuki, azúcar blanco, azúcar moreno y un poco de sal. El azuki o judía roja proviene de China, pero es en Japón donde más se elabora.
Ingredientes.
- Sake.
- Cointreau.
- Zumo de Limón.
- Anko – pasta de judías azuki.
- Fresas.
Decoración: golosina casera de limón, miel y fresa.
4º SEA OF tsushima.
La flor de guisante de mariposa azul crece en las zonas tropicales de Asia. Estas flores se encuentran entre las pocas fuentes en la naturaleza que pueden teñir de azul líquidos de forma natural. De hecho, son estas flores las que utilizan para crear el blue curaçao, el famoso licor de naranja teñido de azul.
Ingredientes.
- Sake.
- Agua de alga, salicornia o esparrago de mar.
- Limón – Zumo/Jugo.
- Infusión de flor de guisante de Mariposa Azul.
Decoración: salicornia.
5º CHUHAI.
Esta es una receta muy habitual entre los jóvenes de Japón. Es una variante de otras más clásicas. Esta, en concreto, se toma en primavera o verano. La bebida principal es el shōchū o el sake. Digamos que es la auténtica referencia oriental del Gin tonic.
Ingredientes.
- Sake o Sochu.
- Sirope de violetas.
- Hielo roto.
- Soda.
Decoración: cristal de violetas y rosas.
6º KAPPA HENDRICKS.
Kappa es un monstruo del folklore japonés de los más conocidos, que vive en los ríos y lagos de Japón, es letal y un tanto bromista, también considerado dios del agua. Se dice que se come a los niños que pasan cerca del agua: son su manjar preferido junto a los pepinos. Para evitar ser devorados por el monstruo, los niños llevan pepinos que le lanzan para entretenerlo y así poder escapar de él.
Así que cuando estés junto a un lago o río en Japón recuerda llevar contigo unos cuantos pepinos o lanzarle esta receta, con la que seguramente te deje tranquilo.
Ingredientes.
- Sake.
- Gin Hendricks.
- Piña – Zumo/Jugo.
- Agua de pepino.
- 1 pieza Espárrago blanco.
Decoración: ojo de kappa hecho de pepino tallado.
7º KIOTO NINJIN KINTARO.
Este cóctel está hecho en honor a Kintarō, cuya traducción habitual es «niño de oro», un héroe del folclore japones. Niño de fuerza hercúlea, vestido siempre con un delantal rojo, de ahí su relación con el Kyoto Ninjin (zanahoria roja japonesa) fue criado por una ogra en las alturas del monte Ashigara. se dice que se hizo amigo de los animales de la montaña y, más tarde, después de haber capturado a Shutendōji, monstruo terrorífico de la región, se convierte en discípulo del samurái Minamoto. Es un personaje popular en los géneros del Kabuki (teatro japones).
Se exhiben muñecos Kintarō el día de la fiesta de los niños varones, la Tango no Sekku, para que los niños puedan ser algún día tan fuertes y valientes como Kintarō, pues este está considerado como un ángel de la guarda para los niños en y es símbolo de éxito, salud y virtud.
Ingredientes.
- Ron blanco Japones Ryoma 7 años.
- Agua de zanahoria.
- Jengibre – Raíz, rayado.
- Gotas de Salsa de Soja/Soya.
- Miel.
Decoración: brote de zanahoria.
