Llega San Martín ajustando cuentas con los cochinos
La matanza del cerdo empieza por esta época, una estampa casi desaparecida en la España del siglo XXI, aunque quedan familias que mantienen el ritual para autoconsumo
Paciencia, precisión en el corte, conocimiento de la anatomía del animal, técnica, experiencia y tres cuchillos: uno de punta fina para el degüello, otro de 22 centímetros para el despiece y un hacha de carnicero para separar las costillas del espinazo. Durante siglos así se han matado a los cochinos en España. Se hacía justo estos días, cuando llega San Martín señalando la hora del juicio final para los guarros y regalando al refranero su filosofía metafórica popular y socorrida del ajuste de cuentas, en lo que, por cierto, nada tienen que ver los cerdos. Las matanzas caseras, dedicadas sobre todo al autoconsumo, hoy son historia. Es una actividad marginal arrasada por el tiempo y las prácticas industriales.
En las regiones más al sur, especialmente Extremadura, Andalucía y Castilla La Mancha (tierras de encinas, robles, quejigos y alcornoques), el final del verano y el otoño coincide con la montanera, cuando las bellotas caen al suelo y los cochinos entran en la fase final de la crianza, en libertad y alimentándose de ellas. La bellota es el superalimento de los guarros: almidón, azúcares, proteínas y fibra. Pero sobre todo ácido oleico, una grasa saludable que le hace ganar peso y calidad durante la montanera, donde además consigue la infiltración precisa y preciosa de grasa en el músculo que produce ese pedazo exquisito de momia (como decía José Luis Coll) que es el jamón ibérico de bellota.

Hoy ya no se sacrifican cochinos en las casas o pequeñas fincas de la geografía española. Entre otras cosas porque las familias no tienen ni Co2 a mano ni pinzas para darle una descarga eléctrica al cochino y dejarlo grogui, como obliga hoy la ley de protección animal en aras a minimizar el sufrimiento del guarro. Pese a una idea falsamente extendida, las matanzas tradicionales no están prohibidas. Una directiva europea de 1993 permitió su práctica, aunque se obliga al aturdimiento previo del animal bajo amenaza de multa de 600 euros.
Solo algunas familias mantienen ese rito convertido en tradición secular. Pero la matanza en su día era una fiesta. Al amanecer se iba a por los cochinos y se acercaban al lugar del sacrificio, aunque durante mucho tiempo los cerdos casi compartieron casa con la familia, en el corral de atrás o en cualquier cercado artesanal, la zahúrda. Las mujeres llegaban con los lebrillos de barro, las palanganas de zinc, las ollas y la leña. Los niños revoloteaban alrededor del animal en un ambiente que mezclaba la tragedia y la fiesta, un arte en el que España es madre y maestra.
La aversión a la sangre, el animalismo, el rechazo social a todo lo que conlleva el sacrificio animal, ni siquiera la estética de un país en blanco y negro que se remangaba para hacer morcillas, ninguno de estos elementos de la sensibilidad de nuestro tiempo formaba parte del cuadro. Matar a un cochino para comer el resto del año es lo que se hacía toda la vida. Casi desde el primer cuchillo de sílex del paleolítico aunque posiblemente eran bisontes y no guarros patinegros.
El otoño está a punto de irse cuando llega la matanza. Pellizas, café, copa de aguardiente para combatir el frío de noviembre y ese viento helado que por la mañana corta el triple; y perrunillas, dulce típico extremeño elaborado con manteca de cerdo, harina, huevo y azúcar. Y llegaba el matarife. Bajo el brazo traía el instrumental de precisión. Sus cuchillos afilados y el acero templado con el vaciado exacto en la piedra de esmeril, ni más bajo de lo necesario para asegurar el corte ni más alto de lo debido para no debilitar la resistencia de la hoja. En los entornos rurales un matarife tiene una categoría. Persona y personaje. Con un lazo metálico enganchaba al cochino por la mandíbula y lo acercaba al banco de madera, esa especie de altar del sacrificio, donde otros hombres lo ayudaban a sujetar al cochino, que a esas alturas ya se las había visto venir y, con razón, temía por su yugular.
Sacrificar a un cochino, sin entrar en un relato detallado de un proceso que se tiñe de rojo, tiene una parte de arte y otra de ciencia, como la vida misma. El matarife busca arrimarse al hueso y evitar las partes blandas para evitar dañar las piezas de más valor. Opera paso a paso, sin precipitarse. De su maestría dependen las reservas del invierno. Un conjunto de decisiones técnicas permitirán que la matanza produzca piezas impolutas o de menor calidad. Es necesario que el corazón del animal siga bombeando sangre hasta el final para que las piezas queden lo más limpias posible. Entre ocho y diez segundos dura la vida del guarro desde que el matarife le pega el corte mortal.
Paco Romero alias Chipurri, de 51 años, lleva haciendo esto desde que era un niño. Aprendió de su padre, quien lo había aprendido a su vez de su abuelo. Saga de matarifes de Fregenal de al Sierra (Badajoz), que hoy son propietarios de Embutidos Romero, una fábrica de productos ibéricos de primera calidad. “Hay que saber dónde se da el corte exacto y es muy importante saber que la velocidad está reñida con la calidad”, explica. El cerdo, al contrario que el vacuno, no se chuletea, sino que se separan las costillas del espinazo. “No se trata de fuerza sino de precisión, de maña”.
El cochino, suele llegar con 14 arrobas de peso (unos 170 kilos) a su hora final. En el momento sacrificial participa toda la familia. Los hombres sujetan al animal con cuerdas y las mujeres y los niños recogen la sangre en cubos. Con esa sangre se elaborarán las morcillas, que pese a la extendida creencia moderna, no nacen ya envasadas al vacío en los lineales de los supermercados. En menos que canta un gallo, el cochino queda despiezado y a la espera del dictamen del veterinario. En las zonas con tradición de matanzas hay veterinarios de guardia los fines de semana. Acuden a las casas exploran las vísceras del animal y se llevan una muestra del diafragma para analizarlo y comprobar que está libre de triquinosis. En tres horas se conoce el resultado. Y empiezan a elaborarse lo que en breve serán morcillas, chorizos, salchichones, lomos y demás piezas suculentas. Los jamones y las paletillas tendrán que esperar entre dos y tres años en un proceso de curación que lo convierte en uno de los tres elementos mágicos de la gastronomía para Ferrán Adriá junto al erizo de mar y la trufa blanca del Piamonte. Paco Romero Chipurri tiene una hija y dos hijos de entre 9 y 21 años que ya participan en estos rituales.
Toni Magro, empresario propietario del hotel La fontanilla, en Fregenal de la Sierra, también lleva toda la vida elaborando sus productos ibéricos. “Lo hacemos industrialmente, aunque hay una parte del trabajo que sigue siendo manual y artesanal, pero ya no se mata apenas en casas. Ahora la mayoría de mataderos sacrifica entre la Pura (la Inmaculada, el 8 de diciembre) y marzo” y también recuerda cuando la matanza era una fiesta en los pueblos. “Participaba toda la familia, los vecinos, los amigos. Se hacían unos garbanzos y una caldereta de borrego y se echaba un día estupendo. Venían a ayudar los hijos que estudiaban fuera y tenía mucho sentido cultural y de raíces con lo que somos”, añade. Magro elabora su propia chacina, con el aliño justo “y su toque de humo, como a mi me gusta” mientras trabaja para que su hotel sea un atractivo más para la zona.
El culto al cerdo, de una manera u otra, hunde sus raíces en nuestra civilización. Griegos y romanos ya festejaban su sacrificio. Los romanos organizaron el sistema de matanza, establecieron las edades mínimas del animal para su sacrifico, pautaron su comercialización e inventaron el oficio de carnicero. Los celtas la practicaron asiduamente. Y durante la Edad Media las matanzas se trasladaron del interior de las viviendas a la puerta de la calle para que los cristianos nuevos demostraran que en aquella morada no vivían ni judíos ni moriscos, cuyas religiones prohíben el consumo del cerdo. En la España de los años cincuenta, en algunas localidades como Campos de Criptana (Ciudad Real), a los recién nacidos se les fotografiaba dentro de un cerdo abierto en canal, como muestra la fotografía de Isidro de las Heras que conserva la fototeca del pueblo. Las abuelas apelaban así a una vida llena de venturas y abundancia para sus nietos. La matanza además de hondas raíces antropológicas y culturales ha tenido un perfil taumatúrgico. Como en la costa una buena marea de pesca o en las zonas de vid una buena cosecha. Fiesta, tragedia y vida. Lo que somos.
Ya se sabe que del cerdo “hasta sus andares”, como reza el refrán. Todo se aprovechaba. La carne, al fresco; las carrilleras es la casquería ennoblecida por la cocina actual, pero casquería al fin; las patas y paletillas para jamón, las piezas codiciadas para embutidos; de la sangre, morcilla; las orejas en escabeche o rematando guisos. El rabo tiene su guiso y las pezuñas incluso se pasaban por las brasas y se comían. Los chavales se hacían incluso un balón con la vejiga del animal. Paco Romero se interroga por algunos de los cambios experimentados en la sociedad. “Está claro que hoy ha cambiado la conciencia y hay mucha sensibilidad con todo lo que tiene que ver con los animales. Pero no se nos puede olvidar que somos depredadores y que comemos carne. Pensar que se mata a un animal para comérselo sin sacrifico y sin sangre es vivir en la irrealidad”, concluye.
