La Vinográfica, los vinográficos y la vinografía: la nueva religión del vino y la conversación

La agencia literaria dos Passos y el grupo La Judería abren en Vejer un local con botellas etiquetadas por artistas de renombre. Los vinos, los libros y la conversación crean un espacio único

a Vinográfica era un nombre esperando dueño. Los personajes de Pirandello buscaban autor porque aspiraban a ser. La Vinográfica estaba en el limbo que ocupan los nombres redondos que anhelan existir. Y vaya si existe. Exactamente desde el 24 de junio, un local desparejado por el efecto de una cuesta imposible del bellísimo pueblo de Vejer de la Frontera (Cádiz). En la calle Nuestra señora de la Oliva, un rompepiernas a prueba de ciclistas colombianos, abre sus puertas este coqueto, singular, único e irrepetible espacio. Que no es restaurante ni bar, ni taberna ni cafetería. Porque La Vinográfica no se clasifica con los ortodoxos cánones del canal Horeca que definen un espacio dedicado a dar de comer y beber. Más bien se nombra con la intención. Y con la filosofía del compartir. Vinos, platos al centro y libros. ¿cabe mayor hedonismo en un mismo empeño? Sí, cabe. Porque en un doble tirabuzón los impulsores del local disponen de vinos embotellados para ellos y abrigados con etiquetas originales pintadas por artistas gráficos de distinto pelaje. Así que La Vinográfica tiene un poco de todo y un mucho de otros todos.

Miguel Munárriz y Palmira Márquez, propietarios de la agencia literaria Dos Passos, reconocidos activistas culturales con domicilio en Madrid y un pie en Vejer desde hace 15 años; junto a Mario de la Juana y Joaquín Alfaro, del grupo la Judería, que regenta un restaurante con el mismo nombre en la judería vejeriega, decidieron el pasado miércoles santo que abrirían La Vinográfica. Palmira es de Granja de Torrehermosa (Badajoz); Miguel, de Gijón; Mario de la Juana de Utrera (Sevilla) y Joaquín nació en la capital hispalense. Todos enamorados de los encantos de Vejer, que en árabe significa navío de popa elevada y que por similitud gemela es el espejo europeo de la ciudad marroquí de Chaouen, de donde llegó desnortado hasta que se ennortó el emir que desposó a Catalina Fernández y le hizo construir una ciudad idéntica a su Vejer natal en plena colina de una aldea bereber para que matara su nostalgia. Cosas de la leyenda. Como camino de la leyenda va este establecimiento que ha rematado su primer verano con un lleno diario. “Y lo que es más importante, con el aprecio y el calor que hemos sentido desde el primer día por parte de la gente de aquí”, explica Palmira, quien cree que con La Vinográfica casi pagan una deuda de amor “con un pueblo que nos acogió hace 15 años como si fuéramos unos vecinos más desde el primer día. Yo aquí me abrazo con el panadero y el farmacéutico. Los turistas van y vienen pero el paisanaje permanece y ya formamos parte de él”.

“La Vinográfica se escribe con V de vino y también con V de viandas. La Vinográfica se estrena en Vejer de la Frontera, que es también otra V, y todas ellas tienen la virtud de ver otras vidas con la visión verdadera de la ficción contenida en los libros”, dicen en su carta de vinos. Cada botella es literalmente una obra de arte. La simpar Manzanilla pasada Aurora, el vino espumoso Robles 24 brut nature o el pedro ximénez dulce Robles lucen etiquetas ilustradas por el diseñador gráfico Pep Carrió, un habitual de las portadas de los libros de Alfaguara, Santillana Educación, Galaxia Gutemberg o Random House Mondadori. Carrió ha producido carteles para el Liceo o el Teatro Real. “Construye memoria encerrada en objetos soñados (..) en ese entrelazar de verdades se define una forma de hacer”, dicen de él los vinográficos.

Hay un vino blanco delicado, de cepas viejas vendimiadas a mano, hecho con listán y moscatel de Alejandría y que viene de Sanlúcar de Barrameda con la marea bajo el evocador nombre de Señorita Irene, cuya etiqueta surgió de la mano de Ana Juan, colaboradora de The New Yorker y galardonada con el Premio Nacional de Ilustración. Para el tinto joven Portum Baesippo, una etiqueta de Jesús Cisneros con una personalidad arrolladora.

El polifacético y misterioso Dr. Lapi ha clavado una serie de etiquetas para el palo cortado, el vermut, el oloroso y el amontillado de Aurora y ha convertido la botella en objeto de culto, en souvenir del pueblo y en referencia gráfica de lo vintage. Jugando con estampas clásicas vejeriegas –la Iglesia o las cobijadas, ese enigmático traje castellano femenino que solo deja un ojo al aire- logra “esa elocuencia retro” de la que se alimenta su obra, que según Miguel Munárriz “sustenta su estética en los postulados de Jess Franco, pero en el imaginario que nutre su trabajo y obra gráfica se mezclan Alex DeLarge, Fu Manchú, Russ Meyer y la obsesión compulsiva por acumular trastos sin sentido pero llenos a la vez de él”.

Lo más sano es que usted, lector, se sienta vinográfico y vaya a presentar sus respetos a estos vinos y sus etiquetas, pero destaquemos una última debilidad de la casa: Los insensatos de la Anteojuela, una pedro ximénez de Montilla ilustrada por Marina, la nieta de Miguel, una joven y brillante artista gráfica. Así se entiende perfectamente el juego de palabras de La Vinográfica, que se le ocurrió a Mario de la Juana, que además de empresario hostelero es músico. “El nombre viene de un proyecto antiguo que tenía para hacer un sello vinográfico parecido al sello discográfico que busca grupos independientes que sacan su vinilo con una carátula propia. Esa era la idea: seleccionar vinos peculiares de la zona y que fueran etiquetados por artistas e ilustradores. Vinos únicos e irrepetibles. Ediciones limitadas con unas carátulas únicas. Producciones independientes que huyen de la industria”.

Los propietarios tenían claro que querían hacer algo que fuera más allá de una mera casa de comidas, aunque la carta ofrece sorpresas irrenunciables: el atún pibil en huevo poché sobre torta de Inés Rosales, el cebiche de pescado fresco con aguacate, cebolla roja, maíz y leche de tigre ahumado con cannabis o la riquísima hamburguesa de retinto con papada, crema de queso y kimchi.

La otra parte de la filosofía de La Vinográfica no se come ni se bebe, se lee. Este otoño comienzan sus ciclos culturales, con la literatura como la más bella de las artes. Decorada con vinos y libros, el sitio ubicado en la pedregosa y empinada pendiente es una invitación a la conversación, al compartir y a leer. “Muchos clientes llegan, se piden su copa de vino y se ponen a leer un libro del estante. Cuando acaban colocan su marcapáginas y vuelven al día siguiente”, dice Palmira. Es la forma más perfecta y humana de crear comunidad sin redes sociales de por medio.

La Vinográfica, un nuevo concepto que trasciende con mucho de lo que la hostelería clásica es capaz de nombrar. Sería necesario un Funes el memorioso que le diera nuevo nombre a cada pieza. Empezando por la belleza de esas etiquetas únicas, o ¿qué palabra definiría la profundidad de cada libro con marcapáginas anónimo? ¿Y cómo enfilaría Borges un nuevo vocablo certero y que oliera a nuevo para abrochar el significado humano e irrenunciable de una conversación, unas risas y el afán de compartir?
