Señor Roig, con dos huevos

Mercadona revoluciona más las redes sociales que la alimentación con sus dos huevos fritos precocinados, pero abre un debate vital: ¿Es este el principio del fin de los fogones o es un invento que facilita la vida a mucha gente?

os huevos fritos precocinados, monísimos, un cruce entre los huevos de la cocina de la señorita Pepis y la de los clicks de Famobil, con la yema casi cuajada pero sin cuajar del todo, sin puntilla ribeteando la clara -que es ya mucho pedir- y con restos incrustados de aceite. Tienen un aspecto saludable, podría decirse que incluso razonablemente apetecible. Un huevo tamaño M, aceite de oliva virgen extra y de girasol y un sistema industrial que los precocina para que usted los pase 40 segundos por el microondas y los coloque en el plato. A 1,80 euros la collera ovoide. Eso son, en sustancia, los dos huevos fritos precocinados que está colocando Mercadona en los anaqueles de sus supermercados y que tanto han enfadado a un montón de gente. Y es que la gente se enfada por todo, que también hay que decirlo. Aunque en realidad las redes funcionan así, en tropel: como las bandadas de estorninos que se mueven como por una telepatía magnética.

Vayamos por partes. El porcentaje más importante de los militantes en redes sociales creen que los dos huevos fritos precocinados constituyen una de las profecías del fin del mundo, sin meteorito ni nada. Directamente. En esa banda se detectan cinco grandes tendencias: los indignados porque sí –que son legión-; los que creen que es una afrenta a la secular tradición española -desde La vieja friendo huevos en un lebrillo de barro, de Velázquez- y al significado profundo del hecho cultural culinario y una tercera corriente que básicamente tritura a la cadena de supermercados por el derroche antisostenible del envoltorio de plástico que protege los huevos. El cuarto grupo es más raruno: llaman vagos a sus congéneres partidarios de los huevos fritos y envasados. No han leído ni a Russel en su Elogio de la ociosidad ni a Tom Hodgkinson en Elogio de la pereza: el manifiesto definitivo contra la enfermedad del trabajo. ¿Qué habrá de malo en la vagancia domestica? De los que vociferan se ignora cuántos realmente suelen freírse sus huevos en casa. Y los quintos -grupo de remplazo- alegan que son muy caros. 1,80€ por dos huevos fritos precocinados frente a los 2,85€ que cuesta una docena de huevos camperos en el mismo supermercado. Obviamente, no valoran los costes de innovación, producción, distribución, comercialización etc.

A favor, lo que se dice rigurosamente a favor, hay menos gente y menos entusiasmo. Por un lado, están quienes se preguntan qué hay de malo en que cada uno se organice la vida como quiera: estos no entienden cuál es el problema de que alguien llegue a su casa encienda el microondas y se calce dos huevos fritos precocinados con su medio bollo (presumiblemente también precocinado, congelado y posteriormente horneado). Estos apelan a la vida complicada, artificial y espídica a la que obligan los tiempos. Otros recuerdan que, como reza la canónica sentencia, es que hay quien realmente no sabe ni freírse un huevo. También existe una línea de apoyo a este tipo de productos pensando en personas con alguna discapacidad o serias limitaciones para cocinar a las que el invento les facilita la vida.

          Huevos cocidos Mercadona

Mercadona defiende que los huevos fritos, fabricados por la empresa guipuzcoana Lagumar Seas, que los empaqueta con el reclamo del producto en dos idiomas (“plancha” y “grelhados”, que significa a la parrilla, en portugués) representan una innovación y explican que están testando su aceptación antes de distribuirlos en todas sus tiendas. Mercadona ya había sorprendido poniendo en el mercado su kit de media docena de huevos cocidos que, según explican, duran hasta 40 días frescos por el efecto de una laca alimentaria que se aplica en la cáscara del huevo para conservar intactas todas sus propiedades.

Y en realidad, hay más antecedentes en el proceloso mundo de los huevos elaborados. Un cocinero y emprendedor aragonés, Javier Yzuel, revolucionó en 2016 la comida rápida con sus huevos fritos congelados, que se los compraba Burger King por decenas de miles. Hasta 150 millones de huevos fritos congelados al año han llegado a producirse. Aceite de oliva y huevos de cercanía, aseguraba el cocinero que llevaban y porfiaba a que no se distinguía el resultado de uno recién frito. En cualquier caso, ese producto estaba pensado para colegios, caterings, cruceros u otras colectividades, pero no para uso doméstico. El cocinero le vendió la patente a Innovation foods 360, que a su vez se la revendió a Angulas Aguinaga por 30 millones de euros.

                              Huevos fritos congelados

Pese a los debates encendidos que genera cada innovación en el ámbito de la alimentación, la innovación en gran consumo ha caído casi un 40% durante los diez últimos años en España. El Radar de la innovación 2021 de Kantar, especializado en analizar las principales innovaciones, detecta que se ha perdido pie respecto a la primera década del siglo. Y, de hecho, pese al ruido, Mercadona es la marca que menos innovaciones presenta (4%). Carreofur con un 50% y Eroski con un 31% están a la cabeza en este aspecto. Las innovaciones tienen la virtud añadida de disparar el valor incremental del consumo en las categorías donde se presentan más novedades, tira de los mercados y beneficia a toda la cadena alimentaria.

Los huevos estrellados con patatas de Lucio, son posiblemente los más conocidos. Celebridades de todo tipo, desde el Rey emérito con los cuatro expresidentes, cantantes, escritores, senadores, almorzadores y demás gentes de bien vivir, se han retratado en las mesas castellanas y abigarradas de su restaurante en la Cava baja del viejo Madrid. El restaurador madrileño ha hecho profesión de un plato sencillo. Y zamparse dos huevos fritos recién hechos en casa forma parte de los inmensos y sencillos placeres de la vida. Pero tampoco parece razonable conducir a nadie a la hoguera por acudir a los huevos precocinados. “Ca uno es ca uno y tiene sus caunás”, que decía el torero.
