Preparando el desconfinamiento: barras, cañas y muchos amigos
“Cuando salga de aquí…”. Esa es posiblemente la frase más repetida desde el 14 de marzo. Escucho a amigos que la gritan como Scarlet O´Hara lanzando al viento su “a Dios pongo por testigo que jamás volveré a pasar hambre”. Pues eso, hambre de bares. Más de barra que de sala. Debe ser porque eso de compartir y socializar se asocia más a la caña de pie que al formalismo de mesa y mantel. Es muy del sur, aunque no solo. Si bien es verdad que superada la barra, lo suyo es sentarse después. La cosa es que todos estamos deseando pisar los bares. En esta crisis hemos perdido una parte clave de la salud, como es la salud emocional, esa parte que nos equilibra cuerpo y mente y que consiste en la práctica del sanísimo ejercicio de salir, compartir, abrazarse, brindar. Abrazo, palmetazo en la espalda y risa cómplice en la cercanía que impone un bar.
En los albores de la llamada desescalada, servidor ha empezado a hacer el primer borrador. Le gustará a Gabriel Seoane. Lobito de Mar: el arroz con chuletillas de cordero, que le va a encantar a Gonzalo Hidalgo.
No veo el día de entrar en el Txistu y dale un abrazo a Antolín, a Sergio y a Alfonso. Y echarnos al coleto sus carnes y pescados y esos vinos que encienden el alma tanto como su hospitalidad. Soy txistómano.
A Óscar le pediré en Alabaster la merluza al pil pil de lima Limón y lo que mande beber, como la última vez que fui con Juan Luis Álvarez. Y me llevaré a Paquito Gómez a Bibo a por un brioche de rabo de toro y media de ensaladilla.

Y a Ale Alcántara en El Bache, además de abrazarlo, le daré carta libre y que ponga algo de jerez en la copa, que lo bordará yendo como iré con su colega José Yélamo. En Malasaña hay un rinconcito gallego que se llama Farmacia de Guardia donde me voy a tomar la caldeirada de nécora al wok. Tengo que descubrírselo a Maite Carreño. Con Manolo Villanueva, quien me inició en esa religión a por verdinas en Asturianos. Y en la Taberna Los Delgado el plato del día, que nunca falla, para gente de gustos sencillos como Miguel Ángel Martínez Villar cuando venga a Madrid a ver al Cádiz ya en Primera y tras golear al Real Madrid en el Bernabéu .
Habrá que ir a Lavapiés a La burlona: fideuá con foie asado como le gusta a Begoña Marañón y a La Caníbal en la calle Argumosa a beber vino natural con Fernando Angulo, que hace unos vinos naturales estratosféricos en Sanlúcar de Barrameda. Con Antonio Yélamo y Dieguito Suárez, chuletón sin tonterías en el Asador Donostiarra. A Juan Cierco le gustarán las chuletitas de corzo y el jurel asado de Béker-6. David García nos espera en El corral de la Morería para iluminarnos con el pichón en dos cocciones con risotto suave de trigo sarraceno y la mejor bodega de jereces de Madrid. Al dúo Lalalá les vuelve locos. Barrutia y el 9 tiene una tortilla de patatas con trufa blanca y negra y unas trompetas de la muerte con longaniza que a Manolo Guedán le va a gustar. Con Toni Garrido y Tom Khalen alias “el sueco” tendremos que repetir en Trifón y que el rabo de toro nos acompañe. La Raquetista, que además permite descorche, le gustará a Pepa e Inma. Y en Arima, vermut, gilda de la casa y lo que toque, con Antonio Belmonte. Arroz en el Ventorrillo Murciano con Manolo Molés. Y a Coque, con Félix Puebla, que hay mucho que hablar. Una gaditana para terminar, con Carlos Rosado y Jorge Bezares: manzanilla con queso de la sierra de Cádiz en el Lambuzo.
Y ya.
No debo abusar más de su paciencia, mejor una segunda entrega con los amigos que quedan a un lado y otro de la barra. Volveremos, porque todos estarán abiertos y mantendremos intactas las ganas de bares y de esa cosa tan rara, preciada y exclusiva que es la amistad. Así que volveremos a ser felices. Cuando se pueda y como se pueda. Ahí estaremos.
PD. Por cierto, al hilo del título de post. Jaime Urrutia explicó recientemente que uno de los temas fetiche de Gabinete Caligari, Camino a Soria, se iba a llamar en realidad Camino a Cuenca, pero por cuestiones de rimas y métricas le cambiaron el nombre. Imagino el enfado de muchos sorianos. Confiemos en que no termine por revelar un día que lo de los Bares, qué lugares es una metáfora de cualquiera sabe qué cosa. Vaya decepción.
