Gastronomía de cuaresma: una dieta detox con 500 años
Austeridad en la mesa para combatir los excesos de las carnestolendas. El recetario típico de estas fechas perdura más en las mesas españolas como tradición que como recomendación religiosa. El potaje de vigilia y las torrijas son los platos más comunes en toda España
n refrán colombiano dice: quien peca y reza, empata. Sabio el refranero. Obsérvese que el rezo penitencial no te exime de los pecados anteriores, solo te iguala. Te rebaja la pena, una condonación parcial, pero no te exonera del todo. Pero en todo caso es un avance: sales de la zona de tinieblas hacia la luz. Pues si entiende eso ya ha comprendido buena parte del origen de la gastronomía de la semana santa española. Tras las Carnestolendas, o sea, el Carnaval, un tiempo de excesos, sin privaciones y en el que se le da rienda suelta a las pasiones carnales y a la gula, viene la Semana santa a imponer sus ritos y costumbres ofreciendo la posibilidad de redimirse. Digamos que es como una dieta de desintoxicación para el alma pero a través del cuerpo contra las fiestas paganas, que hundían sus raíces en Roma y se extendieron por todo el cristianismo. El primer método detox con 500 años de antigüedad. Hay que advertir que tanto la idea de darse al pecado libérrimo en Carnaval como someterse a los dicterios de la austeridad cristiana son decisiones voluntarias. Nadie te obliga ni a pecar ni a rezar. Pero si está abonado a los dos clubes porque ha encontrado el equilibrio de su universo entre ser bueno y malo, su yin y su yang, y le interesa saber más, indaguemos en algunas explicaciones e historias interesantes.
La frontera se traza el miércoles de ceniza. Ese día es el tradicional entierro de la sardina: de sus cenizas surge una restauración del orden, una llamada a la introspección, a la recuperación de una vida ordenada frente a la holgazanería y la entrega a los placeres del cuerpo. En las iglesias, a la vez, ese mismo día se impone la ceniza resultante de los ramos bendecidos hace un año, y empiezan los ayunos y la prohibición de tomar carne, que en la biblia representa el cuerpo de Cristo en la cruz. En cambio, el pescado es citado con profusión en el Nuevo Testamento y es objeto de los milagros del mesías. Posiblemente esta dieta hoy rige mas como tradición que como precepto religioso en muchos hogares, sobre todo en los que la cocina está al mando de madres y abuelas de generaciones anteriores. Todo este ritual católico, con mucha fuerza histórica en nuestro país, fue generando con los siglos un recetario propio, adaptado a la austeridad y las prohibiciones. Durante tiempo, en cuaresma solo se hacía una comida al día, por la tarde, a la caída del sol, al estilo del Ramadán, basada en legumbres secas, pan y agua. Como siempre ocurre en la gastronomía, muchas de esas recetas han ido evolucionando, adaptándose a los tiempos y sofisticándose, pero el espíritu perdura.
Establecer el catálogo de los productos prohibidos no fue fácil y evolucionó -y aun lo hace- a lo largo de los siglos. En el Concilio de Aquisgrán, Ludovico Pío, emperador e hijo de Carlomagno, indultó a los capones al no considerarlos carne, por lo que entraron en el consumo cuaresmal. Al contrario, los monjes del Monasterio de Poio, en Pontevedra, quisieron excluir el rodaballo pues le parecía un pescado demasiado contundente. Obvio: usted ve una fuente con un rodaballo pilpileado a los tres vuelcos con sus patatas al horno y le parecerá cualquier cosa menos una penitencia. Los caracoles, las ranas y otros seres vivos no considerados ni carne ni pescado terminaron entrando en el cupo de lo aceptable. Incluso el chocolate anduvo en la cuerda floja hasta que el padre Brancaccio en la segunda mitad del siglo XVII lo autorizó con el argumento de que con migajas de pan era nutritivo y “restaura el calor natural, regenera la sangre pura y reanima el corazón”. Con el tiempo, la iglesia otorgaría dispensas de ayuno a muchas personas por motivos de salud o edad, de forma que el ayuno fáctico terminó ciñéndose al miércoles de ceniza, a las vigilias, los viernes y a la propia semana santa. Hubo tiempos en los que se autorizó excepcionalmente el consumo de carne, como cuando la guerra contra Inglaterra que hizo escasear el pescado. En muchas casas españolas no se enchufaba la Televisión el viernes santo en respeto a Cristo muerto en la cruz.
Muchas de las recetas que han llegado hasta hoy ya se recogían en el libro Recetas y memorias para guisados, confituras, olores aguas, afeites, adobos de guantes, ungüentos y medicinas para muchas enfermedades, que se conserva en la Biblioteca Nacional. Este tipo de recetario solían ser escritos por mujeres de linaje instruidas en cuestiones prácticas relacionadas con la cocina, la salud y la belleza.
La gastronomía de cuaresma actual es rica y variada. Hay elementos comunes y después cada comunidad, cada pueblo tiene sus variantes, siempre vinculadas a lo que da la tierra y la temporada. Glosarlas sería prolijo, pero dejemos anotado algo parecido a un listado bastante transversal. No solo simboliza el paso del desmadre a la austeridad, también es la celebración del tiempo primaveral, cargado de nuevos frutos ricos. Que deja atrás el invierno lóbrego y adusto. El nuevo tiempo es vitalidad, energía, nuevos productos de la tierra tras las lluvias y la cosecha. Y las flores.
-1- Potaje de vigilia. Es el plato más común, de norte a sur y de este a oeste. Puede ser de garbanzos con acelgas con bacalao y espinacas. Y en otros casos con variaciones, pero estas recetas son las más canónicas. Sabrosísimo y contundente. Como dirían ahora es un must de la cuaresma.
-2- Las torrijas. El pan duro pasado por huevo y por la sartén juega de titular estos días en toda España. Ahora añádanle variantes que van desde la leche o el vino, el almíbar, la canela o el azúcar espolvoreada, un puntito de licor, la textura, más esponjosa o más recia. Pero son top. Rara es la casa donde no se hacen unas torrijas por temporada cuaresmal. Hoy la industria provee panes especializados, de molde y de horneado diario para este menester. Algunos la emprenden con base de brioche. Y las encuentra en panaderías y pastelerías, algunas son una obra de arte. Se fija su nacimiento en algunos conventos andaluces en el siglo V. Se servía por delante en el almuerzo para llenar bien al personal y compensar la falta de carne en el menú. Hoy en algunos establecimientos hacen las torrijas veganas: sustituyen la leche por leche de soja y el huevo por harina de maíz o garbanzo.
-3- Sopa de cuaresma. A la base de caldo y vegetales se le añaden avellanas, pimienta, sal y azafrán. Sabrosa

-4- Bacalao en salazón. Su conservación deshidratado lo ha convertido históricamente en un pescado de consumo en la España interior. Se emplea habitualmente como buñuelo o rebozado y también acompañando al pisto.
-5- Pisto de verduras con huevos tontos. Tomate, pimientos rojos asados y verdes fritos, y patatas fritas, con dos medios huevos rellenos de pan rallado y perejil, fritos. Se suele coronar con unas tiras de bacalao. Importante plato
-6- Tortilla de pascua en Cataluña: suele llevar tocino, salchichas, butifarras. Se reserva para los lunes pascuales, al término de la cuaresma y se le añade huevos, aceite de oliva y sal. Se hace con carne de cerdo.
– 7- Mojete de Viernes Santo . Es una ensalada de tomate, bonito, aceitunas, huevo y cominos que se come en Hellín ( Albacete) tras la Tamborrada.
-8- Revuelto silvestre de Cuaresma de la sierra de Cádiz, con acelga, tagarninas y espárragos trigueros
-9- Olla de Congrio en Cataluña y calderetas en el País Vasco. Guisos de pescado que forman parte del recetario cuaresmal en la costa del Mediterráneo y el Cantábrico
-10- Cordero de pascua. Casi ningún plato tiene la carga bíblica del lechazo. En España suele hornearse, en otros países de Europa central y en el Este se guisa con arroz, cebolla e hierbas aromáticas. La influencia de cada iglesia y lo que da la tierra determina la receta.
-11- Huevos de pascua. Infinitas versiones en los entornos rurales con una raíz: el símbolo de la fecundidad
-12- Patatas viudas. En muchas zonas del norte se guisan como las patatas riojanas pero sin el chorizo
-13- La mona de Pascua. Típicas de Cataluña o Valencia Es una torta pascual que acaba con la cuaresma y sus abstinencias. Receta muy fácil: harina, huevo, azúcar y sal. Y mucho trabajo de amasado antes de la cocción. La variedad más extendida es el panquemado. Es el dulce del lunes de pascua. En Cataluña es tradicional que los padrinos selo regalen a sus ahijados ese día.
-14- la titaina de Valencia (un plato de los barrios marineros, sobre todo del Cabanyal) que es una especie de sofrito con tomate, pimiento rojo asado, piñón, ajo y ventresca de atún asada)
Hay mas, muchos más, como la porrusalda (sopa de puerros, cebollas y patatas en el País Vasco ) las Aceitadas de Zamora (unas tortas hechas con aceite, sin grasa animal, y anís), el hornazo de Jaén (unos bollos de aceite de oliva en forma de cruz, que lleva huevo y anís), o los gañotes de la sierra de Cádiz (huevo, harina, canela, azúcar, ajonjolí, canela y ralladura de limón), o el sancocho en Canarias (pescado salado con patatas, batatas y mojo verde o rojo)
La lista es casi infinita pero los aquí recogidos son posiblemente los más comunes, los que hoy perviven en las mesas de toda España para recordarnos la debilidad de la carne, los rigores de la austeridad, y de nuevo, en un continuum, el retorno al chuletón.
