Pero aquella escuela ha sido renovada, intensificada y reinventada por estos tres cocineros catalanes que han logrado con su restaurante Disfrutar, en la calle Villaroel de Barcelona, dos estrellas Michelin en solo unos años de existencia. Tal ejecutoria merecía un acta notarial que diera fe impresa. Abalon books lo ha hecho y cimenta su posición como uno de los grandes sellos de referencia en publicaciones de gastronomía con solo siete libros editados. El volumen I de Disfrutar es una obra ciclópea, llamada a perdurar en el tiempo, a convertirse en un clásico moderno y a cambiar el concepto de lo que entendemos por edición gastronómica. Un fenómeno global, que nace en español en inglés, y que ha obtenido el Premio Nacional de Gastronomía a la Mejor comunicación gastronómica de 2021. El jurado considera que “esta obra monumental de clara vocación didáctica es una de las mejores obras de cocina creativa publicadas recientemente”.

El libro relata la historia del restaurante con preciosismo gráfico y un concepto de la edición que traslada la excelencia a cada elemento. Igualmente, bucea en su oferta gastronómica y ofrece algo de sumo interés: un archivador detallado con las recetas y mostrando lo que no se ve ni se conoce: el proceso creativo y de documentación de los chefs para llegar al plato final.
Disfrutar, que elabora 80 platos nuevos cada año, es uno de los referentes globales de la cocina de vanguardia. Situado ya en la novena posición de la lista de The World´s 50 Best restaurants. Y en progresión geométrica tanto por su concepto desafiante como por su eficiencia gastronómica, técnica y creativa. El libro recoge más de cien platos elaborados entre 2014 y 2017. Entre ellos, el célebre Panchino relleno de caviar, los Macarrones a la carbonara o la Mazorca de maíz multiesférica. La publicación reúne a un elenco marcado de primer nivel. Lo ha prologado Ferrán Adriá, quien define en cinco ideas el éxito de los cocineros: esfuerzo, imaginación, creatividad, trabajo en equipo y valentía. “El coliderazgo de estos tres cocineros, el respeto, cariño y admiración que se profesan entre ellos y hacia su equipo es vital para comprender su éxito y por qué son unos de los profesionales más queridos del sector. Una bola extra: Disfrutar es singularidad, una experiencia que difícilmente se puede vivir fuera de su restaurante”, añade Adriá.
El fotógrafo Francesc Guillamet, uno de los más reputados fotógrafos de gastronomía contemporáneos, se encarga del trabajo gráfico y la dirección de arte de Zoo Studio, galardonado con importantes premios de diseño gráfico nacionales e internacionales.
