“La mujer, que es más inteligente, se ha apoderado del mundo del vino porque es menos sacrificado: ya hemos estado en la cocina demasiado tiempo”

La periodista Paz Ívison, premio Nacional de Gastronomía, pionera en informar sobre el mundo del vino, apuesta porque el jerez recupere el rango que tenía como uno de los mejores vinos del mundo

n 1976, cuando aún faltaban dos años para que se equipararan la igualdad del hombre y la mujer ante la ley, que se despenalizara el adulterio y el “amancebamiento”, Paz Ívison (Jerez, 1952), periodista y politóloga, en plena transición política, ya trabajaba en la revista Dunia, un símbolo de un tiempo en el que la mujer española quería sacudirse los 40 años de oscuridad. Dunia, que camuflaba informaciones con denuncia social respecto a la discriminación de la mujer, se disputaba lectores con Telva, de corte más conservador. Paz Ívison fundó y dirigió la primera sección de vinos en una revista a cargo de una mujer. Hasta 11 años estuvo en Dunia. Después, otros 20 como subdirectora de la Revista Gourmets y seis más como directora de Gourmetabaco. Fue la primera periodista especializada en catas de habanos. Ívison es una de las primeras periodistas gastronómicas de España y es especialmente perita en los vinos de Jerez. No solo tiene una nariz privilegiada, es que atesora en su cabeza la historia de cada bodega, los linajes, los cruces, los abolengos. Y los aromas y los alberos. Sigue emocionándose con el punzante seco o salino de un fino o una manzanilla. No hay nada en torno al mundo de los jereces que le sea ajeno. Incluso de raza le viene al galgo: su tatarabuelo Flecher Ívison Parker, nacido en Cumberlad, en el norte de Inglaterra, fundó en 1884 la bodega RC Ívison en Puerto Real (Cádiz). Una marca que durante muchos años ha utilizado González Byass para exportar sus productos.

Paz es inquieta, inteligente, culta, con mirada larga y olfato de perdiguero, es Premio Nacional de Gastronomía (2000) y su currículo lo adornan reconocimientos de todo tipo. Es miembro de la Academia de Gastronomía y Turismo de Andalucía y va por la vida derrochando y compartiendo conocimiento con generosidad y modestia. Rara avis. Ívison, la paz sea contigo.


Usted se incorpora a la revista Dunia en sus comienzos. Una escuela en plena transición.

Sí, la fundaron tres que venían del Reader Digest. Una experiencia preciosa: enfrente mía se sentaba Pepe Hierro, que entonces no podía vivir de la poesía. Estaba María Fernández Shaw también. Yo me acoplé muy jovencita, aun no había terminado la carrera, a ese equipo en 1975 y salimos en el 1976. Fue un soplo de aire fresco para la mujer. Cualquier cosa que hiciéramos era fácil porque no había nada. Era una revista que hoy no tendría sentido pero hablábamos de todo lo que no se podía hablar durante 40 años. Nada teníamos que ver con muestra “competencia” Telva y Hogar y Moda. Nosotros bajo una revista femenina hacíamos cosas poco habituales: discurríamos unos reportajes de denuncia social en torno a la mujer. Y temas de alcoholismo y drogas. De todo, vaya.

¿Por qué fundó una sección de vinos, la primera a manos de una mujer?

Siempre me ha gustado el vino y he tenido una vinculación familiar: desde niña iba a las bodegas, que eran de parientes o medio parientes. El mundo del vino estaba muy presente. Me interesaba y en aquellos momentos no había ninguna mujer en una revista haciendo críticas de vino. Además, me divertían los mundos masculinos.

¿Cómo fue recibida, con lo masculinizado que estaba entonces el mundo del vino?

Me aceptaron muy bien y en otras revistas empezaron a llamarme para que me fuera a trabajar con ellos pero yo estaba feliz y con un ambiente espléndido. No quería moverme de Dunia, que entonces ya era una multinacional alemana donde aprendí muchísimo. Me trataban con condescendencia machista porque era joven y mujer, pero nunca tuve problemas, la verdad. Mi trabajo se valoraba y respetaba. Hay bodegueros que aún se acuerdan de cuando empezaba. La primera crónica que escribí fue de un vino riojano de cosechero: Artadi.

¿Cómo era entonces la gastronomía y el mundo de los vinos?

Era un mundo masculino. Ya en 1982 quise hacer un reportaje sobre la mujer y el vino y no encontré a nadie. Solo pude hablar con María Isabel Mijares, que era enóloga y tenia el laboratorio de vinos, y Mari Mar Torres que es la hija mayor de Miguel Torres, el bodeguero catalán, que se fue a Estados Unidos a hacer carrera profesional al no poder trabajar en la bodega familiar. Y llamando a unos y a otros encontré en Terra Alta, en Tarragona, a una cooperativa que tenia una enóloga al frente y allí me fui. Aquello era muy básico, el vino era muy elemental. El mundo del vino era un páramo en cuanto a las mujeres.

El salto hasta hoy ha sido descomunal

Claro, las mujeres han abandonado la cocina y los hombres se han apoderado de ella; y ellas se están apoderando el mundo del vino, que es un mundo mas interesante y menos sacrificado. Cocinar ya lo hemos hecho toda la vida y queríamos salir de ahí ¡Por eso hay pocas mujeres con estrellas Michelin, porque son más inteligentes¡

Es usted una de las primeras periodistas gastro, pero su consagración le llega través de tus conocimientos del vino y especialmente del vino de jerez

Al principio hablaba de todo tipo de vinos pero lo del jerez fue después. Habría tenido poco éxito si hubiera empezado hablando del vino de jerez en una revista femenina. La obsesión del jerez era la exportación. Empecé a hablar más tarde, cuando ya me vi más sólida en mi trayectoria y en una revista especializada como Gourmets. Ahí podía meterme a fondo.

Cuando empieza a hablar del vino de Jerez, a finales de los setenta, aquel era un universo de ventas masivas, con 23.000 hectáreas plantadas y Ruiz-Mateos manejando el sector. Y había cosas que empezaban a hacerse mal. ¿Ahí comenzó a estropearse el futuro del jerez?

Si, ahí empieza en el siglo XX. A mi juicio yo veía que aún teniendo poco conocimiento estaba claro que lo que hacia Ruiz- Mateos era una locura. Tenía muchos contactos en sus bodegas y yo veía que aquello no funcionaba. Tantas hectáreas no iban a ningún sitio en zonas que no eran de jerez superior. No se debería haber incrementado el número de hectáreas con uvas que no eran de calidad. Ahí empieza la debacle. Eso era solo para vender. Se veía que el producto se iba deteriorando. Había mucho lío, las bodegas se las quedaba él y fueron años complicados para el jerez y para Jerez.

¿Por qué el jerez no ocupa el lugar que le corresponde por historia, calidad, singularidad y excepcionalidad?

Esa es la pregunta del millón. Hay muchos factores. Ha habido subidas y bajas, con dos crisis grandes en el sherry. El jerez tenía la categoría del champagne, el burdeos, el borgoña y el oporto. Estaba en los banquetes reales. Tenía el mismo rango del mejor vino del mundo. Otro gallo nos hubiera cantado si hubiéramos mantenido la posición

¿pero qué ocurrió?

Muchas cosas. Jerez empezó a pensar más en vender y a hacer mucho vino por encargo al estilo que pedía el cliente: se vulgarizó el vino. Hubo muchos factores. Uno de ellos venía de antes: el jerez a medida de los clientes extranjeros sobre todo en Reino Unido. Era como una sastrería, para este más dulce, para este más seco… se empezaron a hacer mezclas, a cabecear vinos, los creams y esas cosas. Se olvidaban que los vinos de jerez que tuvieron rango eran olorosos y amontillados, estoy segura. El mercado español era mínimo comparado con el francés por ejemplo. Los bodegueros entendían a España como un aeropuerto para salir a vender fuera.Abandonaron el mercado español. El dinero venía de fuera y eso condicionó al jerez.

¿Las bodegas hacen las cosas bien en general?

Empiezan a hacerlas bien, ahora sí. Los vinos los han hecho bien casi siempre pero ahora se preocupan mucho por las viñas, que no se cuidaron durante años. Con los clones de palomino de alta producción se descuidó todo. Y el marqueting de hoy está a años luz. Antes ni se hacía. Salvo el del brandy, que era muy bueno.

¿El jerez está de moda? ¿Es un boom o solo es cosa de gourmets y de restaurantes de nivel?

Gracias a los grandes restaurantes y los sumilleres y las estrellas Michelin, al Grupo Navazos y los periodistas especializados, muy frikis del jerez, ha cogido su sitio. Pero hay una cosa importante que no sé por que no se hace: ¿por qué en los restaurantes de ticket medio no ponen el jerez, los finos y amontillados en las cartas de vinos blancos? Aunque es un pequeño boom lo que vivimos, hay que dar el salto a los restaurantes medios. A muchos ni se les ocurre ofrecer una copa de jerez.

¿Es demasiado complejo de entender el jerez? ¿ Hay que quitarle complejidad al relato del vino?

Sí, la gente se asusta antes de probarlo. Es verdad que es complejo. Los vinos complicados, como los marsalas y oportos, se venden menos. Se venden los vinos tranquilos y los espumosos. El jerez es difícil de entender, pero hay que quitarle la dosis de trascendencia que lleva consigo. Porque el fino, por ejemplo, es un gran vino blanco. Creo que no debemos complicarlo demasiado porque alejamos a los consumidores En Rueda tradicionalmente ha habido vinos con velo de flor y se han vendido. En Jerez últimamente somos demasiado circunspectos y nos hemos alejado del pueblo.

Hablemos del palo cortado: Jerez crea el misterio de su excepcionalidad y Jerez termina haciendo líneas regulares de producción ¿ya no hay misterio? ¿ya no es un accidente enológico?

Se ha aprovechado el boom del palo cortado gracias a la película de José Luis López Linares. Todo el mundo habla del palo cortado. Ahora encontramos palos cortados que no lo son tanto. Son mezclas de mezclas de olorosos con amontillados. Aunque en realidad los finos también eran un accidente porque la levadura y el velo hace muchos años, se consideraba un accidente. Pero si se pone de moda el palo cortado, bendito sea. Porque en realidad no hay palo cortado malo. No me gusta que se hagan chapuzas pero realmente muy pocas personas son capaces de identificar que un palo cortado viene de una solera auténtica que solo ha sido rociada con palo cortado. ¿Quién dice qué es un palo cortado? Si lo analizas en un laboratorio tiene los parámetros de un oloroso.

En las tierras de Cádiz se están haciendo ahora muchos nuevos vinos tranquilos (Socaire, Mahara, Atlántida, Mirabrás, Le fleq, Finca Moncloa, Garum…) ¿En esa línea hay futuro?

Hay mucho futuro aunque hay que tener cuidado. El Consejo estudia la posibilidad de ampararlos pero con muchos requisitos. Tienen que ser de uvas de la zona y con unos parámetros de calidad y de sabor. Tienen que tener personalidad y que no sean un cajón de sastre porque el nombre de Jerez es muy apetecible. Creo que se definirán muy seriamente sus características para poder estar amparados.

¿Cómo valora la irrupción de Peter Sissek en el mundo del jerez?

Extraordinariamente bien. Nos viene de perlas. Michel Rolland y Galarreta creo que también van a lanzar una línea de jereces. Necesitamos a este tipo de personas. Viene muy bien. Necesitamos distribuir y poner de moda los vinos de nuestra tierra que nos hace mucha falta el aspecto comercial. Me consta que Vega Sicilia también estuvo en negociaciones para comprar la Bodega Maestro Sierra pero no hubo acuerdo.

Las redes sociales lo han pervertido todo un poco o simplemente han arrojado desparpajo (y muchas veces, ignorancia)?

Tiene dos caras. Mayoritariamente el tratamiento de los vinos, como de todo lo demás, no es muy fiable. No tienen capacidad de confirmar, no tienen responsabilidad y pueden decir todas las tonterías que quieran. En las redes hay de todo. Internet como herramienta de trabajo para el vino y su comercialización considero que es muy buena.

Usted ha sido pionera en muchas cosas. En 1982 se subió a una almadraba. Fue la primera mujer a la que dejaban asistir al rito de la captura del atún.

Yo tenía mucho interés y tenía contacto con la familia Ramírez, que tenía la concesión del calado de la almadraba de Barbate. Y allí me fui. Conduje toda la noche desde Madrid para legar al amanecer y subirme al barco. En realidad hasta entonces se había contado poco de aquel mundo. Nadie sabía que era aquello, solo que el atún venía en una lata. El capitán me miró, me montó en su barco y me dijo “no te muevas de mi lado”. Aquello era tremendo. La tripulación era muy de la ilustre fregona de Cervantes, con muchos pícaros (se ríe), por decirlo con suavidad. Era un trabajo duro, de gente de mal vivir que se agarraba a lo que había. Hoy ha cambiado mucho. Hice un reportaje y me dieron un premio. Y tan contenta.
