El camarero, el último héroe de los tercios de los bares españoles

El debate sobre la falta de camareros se topa con un mundo de precariedad, salarios en negro y abuso. El sector calcula un déficit de 50.000 camareros para cubrir la demanda este verano

 de improviso, los camareros. Sin clarines ni heraldos, la figura del camarero se ha abierto paso en el debate nacional. Mucho ha tardado, cabe añadir. Los cocineros, con toda lógica, ocupan casi todo el espacio. Son las estrellas. A su lado, los sumilleres han alzado su figura tiempo ha como los grandes alquimistas del vino, los maridajes y lo que algún cursi llama “el complemento de las sensaciones”. En fin, que ahí están y tienen su espacio. Los productores tienen su pequeño hueco, las bodegas por supuesto. Los números dos y tres de las cocina más refinadas lo mismo. Los panaderos y su pan de masa madre. Los afinadores de quesos, los supercríticos gastronómicos y los interioristas de locales top. Pero ¿y los camareros? ¿Qué pasaba con ellos? ¿No existían?  Incluso Abel Valverde, el jefe de sala del fenecido -lamentablemente- Sant Celoni del hotel Hesperia de Madrid, que era lo mejor de lo mejor, y hoy a frente del exitoso Desde 1911, de la familia de Pescaderías coruñesas, en Madrid, ha escrito un libro estupendo: La sala al desnudo (Planeta Gastro) en el que detalla los secretos para ser un maitre con todas las de la ley. Valverde explica cómo su posición requiere de habilidades y conocimientos que exceden con mucho la propia ciencia culinaria: gestión emocional, economía, psicología, negociación, capacidad de entender y observar al comensal, atender a los críticos gastronómicos o interpretar cada momento y cada día en un restaurante de nivel. Interesante y recomendable. 

La figura del camarero, sin embargo, como el coronel de García Márquez que esperó durante años con tibia esperanza una pensión que nunca llegó, no tenía quien le escribiera. De repente todo son noticias, reportajes, entrevistas, análisis y denuncias sobre el camarero español, el último gran héroe de los tercios de la gastronomía española. Sabido es que un buen camarero te hace repetir y un malage te expulsa del bar o el restaurante para toda la vida. Los buenos camareros de barra de bar de toda la vida siempre han sido confesores, cómplices, asesores gratuitos de consejos bien aterrizados y un poco cotillas profesionales. Oficio obliga. Es la figura destacada del engranaje de un bar. Son la infantería: están en el frente y se llevan todas las tortas. Los camareros de mesa de restaurantes de altura son esos seres vestidos con chaqueta y corbata, cuando imperan las formas clásicas, que como si fueran actores de reparto de los buenos se deslizan entre mesas sin hacerse notar pero abrochando una obra magna. A su paso queda un halo de eficiencia y silencio. Los de chiringuito son dignos de elogio: solo hay que ver como se abren paso, sudorosos y claramente sobrepasados por el hambre y la exigencia de los clientes de vacaciones, acarreando bandejas y jarras de sangría de un lado a otro. Son una raza especial. 

Mis preferidos son los camareros con muchos trienios acumulados, esos que están ya jugando la prórroga, pero a los que una vida sacrificada no les ha roído la clase. Son flemáticos, amables sin ser chistosos, conocen perfectamente cuando toca jugar en zona o marcando hombre a hombre y tienen sobre todo una mirada de doble fondo capaz de identificar a cada cliente desde que ponen un pie en el local: los célebres rayos X del camarero de toda la vida. Saben perfectamente qué bebe cada cliente según qué día y qué hora. Se anticipan a tus deseos y alumbran la sala con su presencia. Patrimonio material de la humanidad.

Pero la figura del camarero, que amerita reconocimientos y homenajes por su pericia y dedicación, es noticia por otro motivo. Sus condiciones laborales, en más casos de lo deseable, se parecen más a las de las minas del rey Salomón que al de una empresa moderna. Es peliagudo entrar en estadísticas y porcentajes, pero desgraciadamente son muchos casos. Trabajan ocho, diez o doce horas -más allá de lo que reconoce cualquier convenio- pero cotizan, en muchos casos, por la mitad. O sea, que trabajan diez años y cotizan cinco a efectos de desempleo y pensión. La precariedad es máxima: días de descanso que no se respetan, días de fiesta que se reconocen solo a modo de inventario, no hay carreras profesionales. Muchos se enteraron de las consecuencias de esta praxis indeseable cuando fueron a cobrar el Erte de la pandemia y comprobaron que su sueldo era justo la mitad, o sea la parte cotizada.  

Pero lo peor es que este debate se ha abierto paso aparejado a una idea que recorre España: hay una crisis de camareros. No hay camareros suficientes para cubrir la oferta de la hostelería española. En la Costa Brava, donde el factor de la estacionalidad lo agrava todo, necesitan cientos de camareros para abrir sus negocios este verano. Pero es un secreto a voces que las condiciones del sector expulsa a sus profesionales y disuade a quienes se acercan. Y se escandalizan, como el inspector Renault en Casablanca: “Qué escándalo, he descubierto que aquí se juega”, decía el tipo tras recibir el sobre con su cohecho correspondiente.


Un país que depende del turismo haría bien en tomarse esto en serio. La hostelería es estratégica en España, es una parte muy importante de la base de nuestro éxito turístico. Y los trabajadores que prestan servicios a estas empresas no tienen menos derechos que otros. Ignoro cuántas inspecciones laborales se harán en muchos de estos establecimientos pero no debe ser tan complicado ordenar el sector.

Así que posiblemente no estemos ante un problema de falta de camareros, por más que sea un sector en el que muchos anidan de paso y en el que también abunda el intrusismo, el problema radica en cómo se trata a muchos de estos profesionales. Dicen los expertos que los establecimientos que pagan correctamente a sus camareros y les dispensan en un trato profesionalizado no tienen mayores problemas de rotación de personal. Seguro que los empresarios hosteleros también tendrán muchas cosas que decir de algunos empleados, que también hay quienes cobrando alguna paga del estado quieren cobrar llevándoselo en negro. Pero hay una consideración mayor: un negocio que pretende basar su éxito en incumplir las condiciones laborales de sus trabajadores para que le salgan las cuentas simplemente no es negocio. Lo que no puede ser negocio es con el abuso y la explotación laboral. Por ahí va el debate.

El resultado es que España, que es el país del mundo con mayor concentración de bares, tiene un problema para cubrir la demanda del primer verano -que se anuncia explosivo- tras dos años de pandemia. Un informe de Eurofirms Group calcula que hay una demanda sin cubrir de 50.000 camareros para este verano. Un 3% de los profesionales no han vuelto a esta profesión tras la pandemia, cuando España empleaba a 73.362 camareros. Y pueden dar por seguro que o cambian las condiciones o van a seguir faltando muchos profesionales, hartos de la precariedad y la explotación.

Acuérdese de todo esto cuando un camarero tenga un mal día y le atienda regulín. Que todos somos personas y es posible que ese profesional esté atendiéndolo en condiciones que usted no aceptaría en su trabajo. Y déjele una buena propina, no sea agarrado.

    Es una cuestión de RESPETO a la profesión y como no, a las personas. Hay un código de ontológico en la hosteleria y una reglamentación que debe ser respetada por empresarios, clientes y trabajadores. Suscribo todo lo dicho y gracias por compartirlo.
