Aquí va un pequeño catálogo de cosas odiosas que suceden a diario en los establecimientos del gremio. Todas las fobias de uno son impugnables, faltaría más. Lo que uno detesta otros lo aman, aunque no sepan lo que hacen. En cualquier caso, entiéndase esta enumeración de pequeñas, medianas y grandes tragedias como una contribución productiva, constructiva y propositiva de mejora del ecosistema hostelero, sabiendo que su progreso se traduce directamente en una inyección de felicidad en nuestras vidas. Siguiendo una colaboración que me solicitó Carlos Doncel para El Comidista, ampliamos lista. Ahí la llevan. Añadan o borren lo que quieran. Barra libre. Pero si beben no conduzcan.
Copas con siete dioptrías

Ese engendro en el que el tenedor rasca y la comida parece haber naufragado en un pozo de petróleo es una de las condenas de la modernidad gastronómica. No se le ve la gracia, vaya. Además, su forma generalmente rectangular tampoco es ni estéticamente agraciada ni cómoda para papear, con frecuencia la comida se desborda hacia el mantel y todo se desparrama de la peor de las maneras. Su uso suele denotar un punto pretencioso. Cuando vea un plato de pizarra en un restaurante échese a temblar: lo peor está por llegar.
La conferencia
Pida su plato. Un poner: “Lágrimita austral de lubina pescada en noche de luna llena sobre lecho de tubérculos soasados al perfume de chile de árbol con suflé de pimientitos en rama y babá de sus interiores”. Es verdad que el chef es el que empieza provocando. Pero ahora viene lo peor. Es el temido momento de la conferencia. Oiga, si el plato requiere tanta literatura y para comérselo hay que llevar la caja de herramientas además de haber hecho un taller para aprender a deglutir sin morder el minilomo de lubinita, chupar sincopadamente de dentro a afuera el pimientito y después tragar de un bocado el tubérculo soasado mientras se absorben los interiores del robalo, es casi mejor servir una tortilla a la francesa. Urge una plataforma contra las conferencias en el comedor. Viva el lenguaje de signos. Y viva la tortilla sin instrucciones.
La música, castigo del señor

Es cierto que el cliente tiene el mando a distancia y con no regresar lo tiene hecho. Pero sería un detalle que en las criticas gastronómicas se reflejara si el lugar es de los que aturden con la música. Ayudaría a elegir. Tengo mis listas negras de restaurantes con música. Y ya ni les cuento si se cuela en alguno con televisor tronante esquinero. La muerte, oiga.
Bayeta sucia
Después de la mili, de un pinchazo en la rueda en plena autovía sin rueda de repuesto o cambiarte las lentillas con los dedos pringados de mermelada, una mesa de bar limpiada con una bayeta sucia oliendo a lo peor que se imagine es de lo más grave que le puede ocurrir en la vida. A ver, ejercicio práctico: se coge la bayeta y se pone debajo del grifo, se enjuaga fuerte, sin miedo, gastando agua, se le echa mucho fairy, se vuelve a enjuagar, se exprime y después se limpia la mesa. Antes no. Fácil. Lo primero es antes, decía el clásico. Incluso el Colegio Oficial de Bayetólogos recomienda desechar las bayetas usadas de vez en cuando y estrenar otra. Y ningún bar ha quebrado por seguir tan lúcida recomendación.
Esos deditos
Ese camarero, feliz y despreocupado, que le trae la cerveza o la ración de jamón metiendo los deditos en el vaso y en el plato. ¡Ese camarero¡ Y ese jefe que no le ha dicho nunca que eso es una guarrada, motivo para devolver la cerveza y el jamón y no volver al lugar del crimen jamás de los jamases.
Tinto a temperatura de Córdoba en julio
Esa botella de tinto colocada junto a la máquina de café es un bodegón posmoderno y terrible. Es el vestíbulo del infierno de Dante, con su inscripción: “Es por mí que se va a la ciudad del llanto, es por mí que se va al dolor eterno y al lugar donde sufre la raza condenada”. ¿A qué temperatura estará el susodicho vino? La trufa, esa peste
La trufa es la nueva peste bubónica. Alguien dijo alguna vez: “Creced y multiplicaos”. Y algún espabilado con restaurante pensó que hablaban de la trufa y se puso manos a la obra. Y si todavía habláramos de la Tubber melanosporum. Pero es que hablamos de aceites y porquerías sintéticas que no alcanzan el 1% de trufa. Más bien han visto la trufa en las películas. Hay dos trucos fáciles para saber cuándo le dan liebre por trufa. El primero es abonarse a la idea de que siempre le engañan y nunca es trufa, así casi casi no se equivoca. Ni siquiera le pido que me traiga la cerveza rápido y veloz. Ya sé que está a tope y siempre hay menos personal del que se necesita para atender esta terraza. Pero solo le pido que me dé las buenas tardes y que, con su habilidad profesional, me transmita que me ha visto, que sabe que estoy ahí, que soy de carne y hueso, y que en breve seré atendido. Écheme la carta para que me vaya distrayendo. No sé, cualquier cosa que indique que estamos en la misma longitud de onda. Sería la promesa de una vida mejor por llegar. Me conformo con eso.
Cartas de vino kilométricas
A un restaurante se va a comer y beber no a estudiar. Dicho queda. Y ya.

Bien pegados: rodilla con rodilla, hombrito con hombrito, codito con codito…como en una canción de Georgie Dann. La pareja de la mesa vecina ya forma parte de su vida. Antes del primer plato usted conoce perfectamente sus desavenencias matrimoniales, los líos que tienen con el pequeño, que no estudia ni quemao, y se ha puesto al día en los cotilleos de la pandilla ajena. Que no corra ni el aire. Solo unos centímetros separan su mesa de la de al lado. Es tanta la confianza que se sirve vino de la botella de la mesa de ellos. Ellos son los otros, los compañeros de mesa, que están en tu cena pero sin estar. Sus nuevos amigos de cena de sábado, aunque usted no había quedado con ellos. Comparten contigo las confidencias, las miradas y el pan. Para colmo, a usted le ha costado dios y ayuda llegar a la mesa y sentarse, ha tenido que flanquear un laberinto estrecho y constante de mesas, un pasillo mínimo y al pasar ha ido rozando los platos de los demás comensales con la pierna. Se sabe que el precio de los alquileres está por las nubes, pero todo tiene un límite. Sin embargo, el local está lleno, cosa que no entiende porque usted no va a regresar ni amarrado. Villarejo empezó sus correrías de Gran hermano en esos pequeños restaurantes tipo Bistrot, que en París alcanzan la apoteosis en el desafío a las leyes de la física. ¡Ni micrófonos necesitaba el tío¡Tomaba apuntes al natural.
El síndrome del huevo pasado por agua

Igual este ya es un tema que nos afecta solo a los talluditos -puros uppers- pero eso del tuteo …ummm. No se acostumbra uno. ¿Es muy carroza pedir que te hablen de usted cuando tú le hablas de usted al camarero? Esa familiaridad improvisada no termina de encajar bien con el concepto de atención al cliente. Serán los años.
Los cambios de guarnición también conocidos como Tetris gastronómico
Igual usted ha tenido suerte y nunca le ha tocado en su mesa un comensal aficionado al tetris gastronómico. Pues enhorabuena, porque son terribles, que lo sepa. Si no les ponen freno, en un pis pas deconstruyen la carta. Piden que las patatas fritas del solomillo se sustituyan por las verduras plancha que acompañan en la carta al lenguado, pero que, a la vez, la ajada que lleva el bonito al horno se la pongan a la carne por encima, así como cayendo en cascada. Si fuera posible, dicen ufanos y engañosamente modestos, que en vez de solomillo, el corte sea un entrecot. Y que le traigan en un cuenco -para probarla- la salsa bearnesa que escolta al salmón al grill. Y en vez de segundo, lo quiere de primero. Pero si no puede ser, que me traigan un plato de pasta. Y si cambia el precio, plato de pasta. Con la mano abierta les daba.
