Cocina pura o cocina fusión: un debate para perder el tiempo
No existen las gastronomías puras incontaminadas: los productos que llegaron de América y los que viajaron hasta allí, los cambios económicos, sociales y culturales y la globalización han constituido una cocina global con trazas de los cinco continentes
Es posible establecer canónicamente la receta de algunos de los platos más populares y extendidos de la gastronomía española? Las respuestas no contienen demasiadas certezas. Porque no se trataría solo de fijar la receta sino de limitar el uso del nombre del plato solo a las elaboraciones que se atengan a esos cánones establecidos. Es relativamente fácil estandarizar técnicamente una receta y decidir cuáles son los ingredientes “autorizados”, la técnica de elaboración o los tiempos necesarios para hacerla. Pero ¿quién arbitra? ¿quién decide dónde se pone la raya en platos que se remontan a siglos atrás y que han ido incorporando productos, técnicas y maneras propias de cada época?
Con pepino o sin pepino
Decidir entre el juego de legitimidades de un gazpacho con pepino o uno sin pepino es literalmente imposible. La cocina es cambiante, se adhiere a cada momento, absorbe cosas de otras culturas e ingredientes de diferentes procedencias. No ha mucho que el polifacético chef José Andrés descubrió en un recetario norteamericano de 1824, The Vorginia House-Wife, una receta de “gaspacho” campero español. La autora recomendaba hacerlo en capas, partiendo de un fondo de galletas o pan tostado, tomates en rodajas, pepinos, pimienta, sal y cebolla picada. Añadía salsa de tomate y le sumaba mostaza y aceite. Una receta mucho más antigua que los millones de recetas de gazpachos que circulan por ahí y que de alguna forma debió llegarle desde España. ¿Cuál es la original? ¿esta por su antigüedad u otras actuales que a nuestro juicio se adaptan a los cánones de lo que nosotros conocemos y entendemos y cocinamos por gazpacho? ¿Y quién creó la fabada y cómo se cocinaba en el siglo XVI? ¿estamos seguro que la que comemos hoy es la fielmente histórica?

La paella: vade retro, imitadores
Los valencianos han ido más allá: desde el 15 de marzo de 2022 la paella está declarada Bien de interés cultural – publicado en el BOE- y cuenta con una receta oficial: se añade el arroz al caldo dibujando una cruz y sin remover para que la capa sea fina, hay que comerla con cuchara de madera y cocinarla con cuchara de madera de naranjo. Los ingredientes básicos indispensables son el arroz, el agua, el aceite de oliva, sal, azafrán, tomate, judía verde plana, garrofón, pollo y conejo. Punto. Lo demás es arroz con cosas. Pero aún así, Valencia no podrá impedir que se sigan presentando arroces bajo el nombre de paella aunque solo coincidan en el arroz.
Globaliza que algo queda
La globalización, el turismo y la importación de costumbres e ingredientes lo ha cambiado todo. No es melancolía, solo la constatación de que vivimos en un mundo mezclado o agitado, todo depende de si es usted de la escuela de 007.
Es difícil afirmar que exista la cocina pura. Todo es mezcla, fusión: la gastronomía española mejoró y cambió en el siglo XVI con los productos que llegaron de América. Se puede proclamar el patriotismo castizo del plato que quieran y tatuarse en el pecho la españolidad de la tortilla, pero sin la patata, que llegó procedente del altiplano andino y que incluso antes la habían trabajado los indios navajos en el sudoeste de lo que hoy es Estados Unidos, nuestra querida tortilla no existiría. Y por cierto, llegó a España como rareza botánica y despreciada para la cocina, hasta que los europeos descubrieron su eficacia para combatir el hambre. Pero habrá quién crea que las patatas nacieron en un plato de huevos rotos en la Cava Baja, allá donde Lucio.

Y con ella llegaron el maíz, los frijoles, el tomate, el cacao, la calabaza, los cacahuetes y el pavo y muchas más cosas. Y desde la vieja Europa, en galeones cargados hasta las trancas, cruzaron el charco en dirección opuesta productos como la cebada, el trigo, el arroz, la caña de azúcar, la uva, el café, las naranjas y los limones o la ternera. La cocina latinoamericana tampoco existiría tal cual es hoy sin la despensa española, aunque en aras del purismo y el indigenismo haya quien proclame la pureza de muchos de sus platos para marcar distancias con los antiguos colonizadores. Pero una cocina precolombina pura sería mucho más pobre e infinitamente menos interesante. Y nos aplicamos el cuento: el sofrito es posiblemente la elaboración más genuina de España, la que se repite millones de veces cada día en los hogares y establecimientos hosteleros de nuestro país, pero el tomate vino de tierra de los aztecas y la cebolla de Asia central y la trajeron los romanos.
Fast fake food
Desde que el homo erectus se comió el primer mamut a la brasa esto ha sido un no parar. Aquella fue la primera gran transformación de los alimentos y un cambio relevante en el consumo: de crudo a cocinado.
Con el tiempo, la globalización expandió a toda velocidad la instalación de marcas de comida rápida que supuestamente representan a la cocina de cada país, con excepción de la española, que solo en formatos de mucha calidad y no entregable en domicilios ha sido capaz de exportar el acervo cultural y gastronómico que representan las tapas. Los más jóvenes se han criado creyendo que las fajitas y los nachos son la cocina mexicana, o que las pizzas y la pasta con cualquier cosa por encima representa fielmente la cocina italiana, por no hablar de las cosas que se ven relacionadas con la refinadísima gastronomía china, el sushi o la cocina peruana.

Cada civilización, una capa
Cada civilización – Mesopotamia, Egipto, Grecia, Roma-; cada etapa – el medievo, el Islam-, han ido dejando capas en las gastronomías de todo el mundo, que son muchas y diferentes pero que se resumen a la vez en una sola, que es la mezcla de todas ellas tanto en cuanto comparten en muchos casos ingredientes, técnicas de cocinado e intenciones. La evolución y los cambios políticos, culturales, sociales, económicos han hecho lo demás. Es posible que casi cualquier plato que alguien crea descubrir ya ha sido cocinado antes por otra persona y en otro lugar, y antes de esa persona, otra. Y cada una de ellas ha dejado su impronta y su toque condicionado por los productos que tenía a mano, por su cultura, por sus gustos o porque le dio la real gana. La historia de la gastronomía es la historia de la humanidad. Y que sepamos, la humanidad está bien mezclada y para siempre.
