David de Jorge, el enfant terrible de la gastronomía española

El cocinero vasco, prolífico, culto, comunicador de éxito, provocador y escritor premiado es el gran irreverente de nuestra escena culinaria

ste mozo de Hondarribia, que cumple estos días su primer medio siglo de vida, es un surtidor de sinceridades y provocaciones. Capaz de tocarle los testículos al más pintado con una desinhibición legendaria y una lengua larga que ni se arruga ni se recoge en modo alfombra. Cocinar, comer, beber, fumar, disfrutar, amar, leer, viajar, escuchar y aprender. Diez infinitivos que lo definen. Inmensa humanidad y desparpajo norteño tras los que se camufla la ternura. ¿Cómo si no podría emocionarse con unos brotes de ajos tiernos? Este tipo ve poesía en un chipirón: habla de sus interiores, su pluma, aletas y tinta con la sensibilidad y el hambre con el que Alberti cantó a los huevos fritos con jamón: «Y con los huevos, lo que más quisiera / tan buen jamón de tan carnal cochino/ las papas fritas, un manjar divino/ que a los huevos les vienen de primera».

David de Jorge Eceizabarrena (Hondarribia, 4 octubre 1970), elevado a los altares televisivos como Robin Food, es mal hablado, irreverente, divertido, auténtico, desacomplejado y libre: siempre dice lo que sale de la espumadera. No tiene filtros. Epata cuanto haya que epatar. Y no es que le dé igual todo, al contrario, cree que el mundo progresa cuando cada uno hace bien lo que tiene que hacer y dice lo que tiene que decir. Es lógico, en consecuencia, que deteste la impostura. Le pone de los nervios el neofoodismo, si es que existe esa cosa, aunque sí está acreditado que existen los neofoodistas. Y se ríe, a veces por dentro y a veces por fuera, de la pretenciosidad tan al uso en el universo gastronómico. Y se ríe porque puede. Porque es difícil encontrar en estos pagos algún sujeto activo o pasivo con tanta cultura gastronómica (y de la otra), con tanta lectura aprovechada y digerida, con tantos trienios gobernando ollas y tantos kilómetros de restaurantes recorridos: desde su tierna infancia se ha sentado a las mejores mesas de España y del resto del mundo aunque no le hace ascos a los bares que aún barren con serrín. Es la mezcla perfecta que resulta al batir a un tipo culto, ilustrado, cocinado y viajado con su versión más iconoclasta.

Especial saña incorporan sus comentarios contra el refinadísimo retrogusto del universo vitivinícola. «Beban como les plazca y manden al carajo las chorradas: si les gusta, bébanlo con hielo en vaso de sidra; con chorizo barbacoa o patatas fritas al jamón, disfrútenlo mandando al infierno los maridajes y las soplapolleces«. Así despacha la criatura una crónica sobre el champagne Couarres Chateau. O va más allá cuando planea cómo pedir una copa del vermú más clásico de Italia:» Me encantaría decirle a un barman: ponme un vermú Carpano y menéamela con la mano».

Cocinero y comilón, galopando del desayuno al segundo desayuno y del segundo desayuno al primer almuerzo antes de alcanzar el segundo y la hora de la primera merienda que precedía a los dos cenas reglamentarias, alcanzó la cumbre de 267 kilos. En 2014 protagonizó «Robin food: atracón a mano armada» en Telecinco. Fue su salto definitivo a las audiencias nacionales.

Experto en barras y curioso que se mete en cocinas ajenas sin ser invitado pero siendo siempre bien recibido, sabe valorar el esfuerzo de la cadena alimentaria que viene del mar y el campo hasta llegar a la mesa. Dos veces ganador del concurso al mejor cocinero joven de España -se impuso a Joan Roca o Andoni Aduriz– se formó en las cocinas de grandes como Hilario Arbelaitz, Michel Guérard, Jacques Chibois , Pedro Subijana o Martín Berasategui, su amigo, socio, confesor, padre espiritual, , maestro, cómplice y cuate. De David dice el chef de Lasarte, que suma doce estrellas Michelin: «Es el mejor cocinero de España. Nos da sopas con ondas a todos». Su carrera profesional es la de un cocinero sin restaurante, al menos técnicamente. Pasaron los años de fogones diarios. Su carrera como comunicador es exitosa. Y como escritor es extraordinaria. Su libro Con la cocina no se juega obtuvo en 2010 el premio al mejor libro del mundo en la categoría de ensayo y literatura concedido por los Gourmand World Cook books Awards. Acumula casi una veintena de libros publicados sobre gastronomía, costumbres y otras hierbas así como una colección de prólogos enciclopédicos en libros de gastronomía. Ha ejercido de telonero de lujo de la gran Mary Frances Kennedy Fisher, de Julia Child o de Néstor Luján. «Cocinamos o nos vamos a la mierda», proclama recelando de nuestra relación pasiva y tóxica con el modelo contemporáneo de la gastronomía y su entorno socio económico. El mercado, el producto de proximidad, lo rutinario, lo cercano, lo de toda la vida. Lo que a cada uno le sale de la nariz. En ello está. El sentido común como antídoto.

El hondarribitano detesta los diminutivos porque aún no sabe que es una forma poética y sureña de encerrar el mundo en un universo más manejable, una forma infalible de quitarle importancia a cosas que importan mucho, una especie de tuteo con lo sustancial de la vida. En cambio tiene un pie muy andaluz: descubrió la manzanilla y las galeras de Sanlúcar de Barrameda con su amigo José María Gil Arevalo, otro depredador del cructáceo estomatópodo, y se ha hecho devoto de esa religión sin pecados.

Ahí está, plantado sobre su enorme humanidad, puro en mano, cincuenta tacos, y jugando con ventaja: solo puede incitar a hacer guarrindongadas quien es capaz de clavar el recetario clásico francés de memoria. Me encanta cuando llega a un restaurante fino-fino, ese lugar inflacionado de blondas con un menú redactado como los poemas más barrocos de Góngora, y lo primero que hace es anudarse la servilleta al cuello. Gestos así cambian el sistema.
