El consumo de cerveza desborda al de vino en nuestro país: 50 frente a 14 litros per cápita. Algunas explicaciones hay que buscarlas en el tratamiento de los vinos en los bares: baratos, calientes y en copas del siglo pasado
os españoles somos más de cerveza que de vino cuando nos arrimamos a una barra. La caña aguanta más que los Tercios de Flandes. Los datos indican que los españoles consumimos unos 50 litros de cerveza al año o 417 copas, lejos de los checos (468), pero en unos umbrales muy estimables. Pero en las explicaciones relacionadas con el consumo de vino afloran otros factores relevantes. Los datos: frente a los casi 50 litros de cerveza por persona y año, el consumo de vino se reduce a 14 litros en nuestro país. Todas las comunidades del norte figuran en las primera posiciones de consumo vinícola, con Cataluña a la cabeza, seguida de Baleares País Vasco, Asturias, Cantabria, Navarra y Galicia. En cambio, Castilla-La Mancha, Andalucía, Canarias y Extremadura, están en la parte baja de la clasificación. Esa es la realidad y la división territorial es elocuente.

Pero también operan razones que obedecen al mal trato que se le proporciona al vino en muchos locales de hostelería hasta convertirlo en un producto sin atractivo alguno. Mucho ha evolucionado la cultura vinícola en España, mucho. Hoy es un país donde se hace buen vino en cualquier esquina. No necesariamente vinos de excelencia, grandes vinos llamados a hacer marca internacional de país. Pero sí buenos vinos con una relación precio-calidad imbatible para los demás países productores de referencia como son Francia o Italia, en Europa; Argentina, Chile o EE.UU. Hace tiempo se rompió aquel prejuicio que decía que solo se podía hacer buen vino tinto en dos o tres denominaciones de origen norteñas, vino blanco en en otras dos o tres y generosos en el sur. Ese tópico ha quedado pulverizado por la nueva generación de enólogos, viticultores y empresarios con una concepción moderna del trabajo en la vid, del producto, el márquetin y el negocio. Indague en los blancos y los tintos canarios, en los andaluces y castellano manchegos. Hay vinos mallorquines excelentes, Madrid está sacando al mercado productos de referencia, en todo el levante se bebe de categoría. Uno de los casos más paradigmáticos es la revolución de la garnacha, una uva que iba regándose por el mundo conforme la Corona de Aragón extendía sus dominios (Francia, Italia, Australia, Chile o EE.UU) pero que siempre careció de prestigio. Le acompañaba la mala fama de una rápida oxidación, lo que la enviaba al trastero de los vinos baratos y de poca calidad. Su transformación, recuperando viñedos antiguos, controlando el rendimiento de las cepas e introduciendo técnicas de elaboración poco invasivas alumbra unos vinos interesantísimos, frescos, equilibrados y con un prestigio creciente.
Para todos los gustos y bolsillos

Pero resumiendo: es casi imposible beber mal en España. Por donde vaya encontrará buenos tintos y blancos, rosados estimables, espumosos de nivel y los mejores vinos generosos del mundo.

Vino malo, caliente y en copas con siete dioptrías
El último informe de Saborea España con Hostelería de España, confirma que la cerveza es la bebida elegida por el 71% de los consumidores para acompañar una tapa. El 22% opta por una copa de vino: 11,3% vino blanco y el 10,7% tinto.
Como se ha dicho, hay diversas explicaciones al bajo consumo de vino en España y especialmente en los bares. Pero detengámonos en una: el enemigo de los vinos las más de las veces está en el propio bar. En muchos casos, el cuidado que un local le concede al vino influye directamente en que los clientes opten por una cerveza. Muchos hosteleros deciden que el único criterio para comprar vino es el precio y así salen las cosas.
Observe algunas barras y verá tintos y blancos que se pueden adquirir a precio profesional en el rango de los dos euros y que se despacha a dos euros la copa y doce euros la botella. “El que haya un mínimo de calidad en el producto y en la copa favorece el negocio. El vino cambia notablemente de una copa a otra y su calidad se pierde. No todas las copas valen para según qué local y con qué personal porque el importe por torturas puede ser un problema, pero hay en el mercado productos con la calidad y el precio adecuado para cada establecimiento”, opina Fran Ramírez, sumiller con 25 años de experiencia, uno de los nombres más respetados del sector y socio de A mano en Madrid y Mallorca.

Ítem más: lo habitual es que en muchos establecimientos encuentre como mucho un tinto y un blanco. Punto. Y olvídese de un rosado o un espumoso. Y eso crea desafección en la gente. Si no te esfuerzas lo más mínimo en dar una calidad diferencial terminas cobrando como todos, y la gente va a lo cómodo, a buscar el vino que conoce a precio bajo o directamente se va a otro tipo de bebida donde el precio y la calidad es homogéneo en todos lados”. Para Paadin, que dirige eventos relacionados con el vino en países de todo el mundo, este “es un problema estructural de la hostelería” y destaca que “hay distribuidores que se tiran de los pelos porque han bajado los precios y la bajada de consumo de vino en muchos locales es abismal pese a que los bares funcionan bien y es debido a que la gente pivota hacia otras bebidas con una relación de precios y calidad adecuada y constante en todos lados”. Y añade: “Hacen falta unas calidades mínimas y un servicio razonable. Si das algo de calidad 1,5, cobra 1,5. Pero no cobres a 4 la calidad de 1,5. Eso no sirve y desincentiva al consumidor”:

Los locales que apuestan por incentivar el consumo de productos diferentes y ofrecer varias opciones por copeo tienen acreditado que el cliente es receptivo a las novedades y se fomenta tanto la fidelidad del mismo como una cultura incipiente por nuestros vinos. Se incentiva la curiosidad y funciona, aunque el hostelero no puede perder nunca de vista las mermas por botellas abiertas que no se venden. Pero en el equilibrio está el éxito.
Muchos establecimientos -cada vez es más habitual- tienen pequeñas cavas, generalmente de marcas comerciales, para conservar a una temperatura adecuada los vinos. Y ofrecen cierta variedad aún por copas, por uvas o denominaciones de origen, utilizando en muchos casos el coravin, un sistema que permite extraer el vino sin descorchar la botella, protegiéndolo así de la oxidación. En España ya no hay excusas para seguir sirviendo el vino de Asunción, que ni es blanco ni tinto ni tiene color. Ya no se puede tratar el vino como en los años sesenta. Es más, muchas copas de las que se emplean- pequeñas, con un dedo de grosor y trienios en el lavavajillas- deben ser aún las originales de aquella década. Ante determinadas situaciones, palidece la idea de que el vino se imponga a la cerveza. Contradicciones en el tercer país del mundo en producción de vino, el primero en exportación por volumen y el primero en superficie de viñedo, según los datos de la Organización Interprofesional del vino.
