La familia Bellido y sus aceites Juan Colín de Montilla: la calidad y el compromiso de la gente sencilla
vicual, picuda y arbequino. Esa es la delantera mítica que trabaja la familia Bellido en sus olivares de Montilla (Córdoba) bajo la marca Juan Colín, que fue un francés que trabajó como administrador de los marqueses de Priego a finales del siglo XVI. El tal Colín, que nada tiene que ver con los Bellido por el tronco familiar, se hizo con un buen patrimonio, que incluía un molino de aceite. El ingenio funcionó hasta la mitad del siglo XX.
Francisco Bellido, panadero y aceitero
La nueva historia vinculada al aceite y al apellido Colín la inició Francisco Bellido en 1977. Francisco era panadero, nada que ver, hasta entonces, con los olivares. “Somos seis hermanos en la empresa familiar”, explica Gonzalo, uno de los hijos, “siempre hemos estado muy alineados con mis padres, que con mucho esfuerzo fueron comprando tierras, y a partir de ahí todo poco a poco”. El ejemplo del padre, y de la madre, María Joaquina Vela Polonio, son el motor de la familia: «Mi padre, de profesión panadero, es un hombre de espíritu trabajador y emprendedor que comenzó a adquirir pequeñas parcelas de tierra hasta convertirlas en olivar», dice Francisco, otro de los hijos.
Los hermanos repartían el pan por el pueblo dos horas antes de ir al colegio. “Y con 17 años ya sabíamos que nos íbamos a quedar en el negocio”.
Y es a partir de 1995 cuando van remozando la finca y empiezan a trabajar con una moderna almazara. Desde entonces, han obtenido más de 40 reconocimientos internacionales y nacionales. Y ha sido un no parar. El caso es que en 2019 presentaron el Ecológico Juan Colín, de picual, que ha resultado ser un aceite de referencia, un elixir de la córdoba olivarera. Se suma al Juan Colín primer día de cosecha, que vio la luz en 2017, también puro zumo de picual. El color verde de este último merece darle nombre a un nuevo pantone: un verde refulgente que, además, aprovecha el envase trasparente para resaltar ese tono imposible de esmeralda cordobesa. Solo embotellaron 4.000 botellas, que se despacharon rápidamente a once euros el medio litro, un precio muy ajustado para la calidad del producto. Hoy no tienen stock de este aceite. Los dos son productos con un aroma profundo y un picor razonable, sin cegar el paladar pero aportando ese brío y esa frescura que otorga la recolección temprana. Recogieron la aceituna el 22 de octubre, cuando la oliva está a mitad del proceso de maduración. Tiene menos aprovechamiento pero la calidad es excepcional: fragancia pura y muy bien estructurado.
La familia Bellido está sacando unos 115.000 litros por campaña, todo cosecha propia. “Es más laborioso pero también es lo más seguro porque controlas todo el proceso”, dice Gonzalo. De hecho, la familia envasa otros tipos de aceites, todos marcados por la calidad que garantiza respeto a los procesos. Es la obsesión por el AOVE perfecto.
La geografía del aceite Juan Colín es pura poesía: Salguero, Alto Jesús, El Vínculo, El Puntal de Montilla, La almarja y San Cayetano de Hornachuelos. Son pueblos y fincas de “viejos olivos sedientos bajo el claro sol del día”, en palabras de Antonio Machado. Motivo de orgullo para la familia es el Museo del aceite que montaron en el molino va para veinte años y el trabajo que hacen con visitas guiadas para promocionar la cultura del olivo, que tiene una parada de excepción en el jardín de olivos centenarios. Es el olivar andaluz un paisaje que aspira a ser declarado Patrimonio Mundial por la Unesco. Son los 70 millones de olivos “de volumen plateado / severo en su linaje/en su torcido corazón terrestre” de la oda de Neruda. 1,5 millones de hectáreas en seis de las ocho provincias andaluzas que en torno al olivar han desarrollado una identidad, un arraigo y una cultura.
Y la sencillez de las cosas bien hechas, del trabajo diario sin aspavientos ni descanso: “Disfrutamos haciendo las cosas bien, que transmitan nuestro estilo de vida y hable de nuestro negocio”, sentencia Gonzalo Bellido. Una familia que es exponente de esas tantas otras que han doblegado al destino fatalista del aceite andaluz, que hasta hace no tantos años parecía condenado a venderse a granel o encabezar los mejores aceites italianos. Hoy Andalucía hace el mismo aceite excelente de siempre pero además ha aprendido a envasarlo y venderlo como lo que es, oro líquido. En ello están los Bellido, quienes cada madrugada siguen encendiendo el horno y por la mañana abren su panadería artesanal, como viene haciendo el padre desde 1938.
